I love this recipe for entertaining, especially brunch or tapas. The ingredients are not cheap, and scooping the mixture into the muffin pan is very messy, but the results are out of this world. They are even great as breakfast leftovers the next day. I have made these meatless for my vegetarian friends too, with good success, although I think the prosciutto really makes the recipe.

I couldn't find smoked mozzarella at the store I was in, so I just used regular. It turned out very good and I question whether the smoked cheese would have been a little too much/ salty. Speaking of salt, next time I would probably omit the teaspon it calls for as the prosciutto is plenty salty. I think some basil would also add a lovely layer of flavor. Very well received at a recent brunch.

Yum, I loved them. My husband didn't love them as much. The cheese was to strong for him. Try a milder cheese if you don't think the people you are making it for will like a strong cheese. I loved it just the way it was intended.

Excellent. Made these for Christmas brunch alongside a spiral sliced ham and Giada's panettone salad. They were easy to make and a huge hit with all my guests. I think the smoked mozzarella really gives this recipe great flavor. I broke the linguine into small pieces before I boiled it - worked great. I filled the muffin tins to the top and it still made 16 frittatas.

Easy to make and they taste excellent. I saw the recipe and new I had to make them. They are great warm and just as good cold the next day. I was really surprised how good they were once they sat and were cold. I will definitely make them again.
