These were fantastic. I am not a big fennel fan. I've tried it raw and roasted, but found the licorice flavor overwhelming. Not so in this dish! The fennel mellows tremendously and pairs nicely with the carrots. Herbs give this dish lots of flavor! A winner in my book!

We made this for our Christmas dinner - and WOW! Everyone raved about it! Delicious! It was so nice to offer something beyond the traditional green beans. I had never cooked with fennel before - but will do so more often. I'll trim more of the outside stalk next time - some of the pieces were too firm.
    Yum!

I wasn't sure if I was going to like this, but it turned out great! It was alot more flavorful than I anticipated. I will definitely be making this again. It exceeded my expectations and beats a run of the mill side dish.

Followed the dirctions and it came out perfect. My husband and I loved it. I didn't have fresh dill so I used dried and it was fine. This recipe is a keeper.
