I've made this twice, and each time I've played around with different dried fruits. I always add raisins, but I'd also used figs, cranberries, and apricots. I love this recipe - it comes out very moist and I didn't find it tough to work with the dough.

I usually never follow any recipe directly. I use currants instead of the figs and I used all butter instead of shortening. Turned out great though and I too found that 30-35 min was plenty of baking time.

The dough was too sticky and way to loose to work with. I had to add a lot more flour in order to even be able to kneed it. It seemed as though there was something wrong with the recipe.

I made this bread on St. Patricks day and just love it. It's not too salty and has just the right amount of sweetness and crunch to it. It cooks quickly in a convection oven so 35min should be enough time.
