We've already made and eaten this several times now. It is the best way ever to do oyster soup!! I add a few extra rockefeller ingredients to mine --- horseradish, anchovies, etc. --- and leave off the fried oysters on top. Instead, I grate a little fresh parmesan on top of each bowl and dot with worchestershire and habernero sauces. Excellent taste and attractive presentation!!!

This is a wonderful soup and not difficult to make. We use fresh texas gulf oysters. The dish is fun for presentation as well with the hot soup and crunchy fried oysters. We like to serve the oysters just on the side of the soup bowl instead of actually in the soup. Freezes well.
