Yes. This did take some time to make but well worth it. I used roasted chicken instead of the Chorizo. I also tossed the chicken in some of the sauce before filling the tortillas. I used Ranchero cheese which is more traditiional as the topping.
Can also make Enchiladas Suizas with this sauce. Follow recipe and just laddle some extra sauce on top of prepared enchiliadas and top with shredded Chihuahua Cheese and put under the broiler until melted. Very tasty!
