- Add to stock pot onion, carrots and celery and saute.
- Cut chicken, add to pot and brown.
- Add thyme, chicken broth, salt and pepper.
- In a separate bowl, combine flour, cornmeal, dried sage, baking powder, baking soda, salt, pepper, buttermilk and oil and stir with fork until mixture comes together.
- Using a spoon, drop dumplings into simmering liquid and cook.
- Pour into bowls, serve with coleslaw and enjoy!
Blue Cheese Coleslaw
- In a small bowl, cider vinegar, olive oil, Dijon mustard, raisins, blue cheese.
- Pour over premixed coleslaw and serve with soup.
Meal #2 Artichoke Puree with Crispy Shrimp
- In a shallow dish add egg whites.
- In another separate dish, combine cornmeal or crispy breadcrumbs and lemon and herb seasoning and salt.
- Add shrimp to egg whites then to cornmeal mixture and turn to coat.
- Add shrimp to skillet and cook.
- In a food processor, add artichoke hearts, oil from artichoke heart jar, white beans and sour and process.
- Fold in chopped parsley.
- Serve 2/3 of the shrimp over the artichoke puree and reserve the rest for another meal. Enjoy!
Meal #3 BBQ Shrimp with Onions, Bacon and Jack
- Roll 1 pound pizza dough into large rectangle.
- Top with prepared barbecue sauce.
- Top sauce with red onions, reserved cut shrimp, cooked turkey bacon, sliced black olives, Monterey Jack cheese and shredded mozzarella cheese and place into oven and bake.
- Cut and serve.
