MENU: Fish and Fowl

Day 1
Chicken in Parmesan-Chive Cream Sauce

Meal #1
Chicken in Parmesan-Chive Cream Sauce

  • Heat olive oil in a large skillet over medium-high heat and add 2 pounds diced boneless, skinless chicken breasts.

  • Season with salt and pepper and add diced shallots, pre-minced garlic, thyme leaves or dried thyme and bay leaves.

  • Add heavy cream to the pan and simmer until the chicken is cooked through.

  • Meanwhile, chop sun-dried tomatoes to cooked rice.

  • To the chicken add: freshly grated Parmesan and chopped chives.

  • Remove the bay leaves from the chicken and fluff rice.

  • Spoon all but 1 heaping cup of chicken over the rice, reserving the remaining chicken for the Penne with Chicken, Wild Mushrooms and Peas dish.

  • Taste and enjoy!

Meal #2
Penne with Chicken, Wild Mushrooms and Peas

  • Heat olive oil in a large skillet over medium-high heat and add chopped leeks.

  • Once the leeks have softened, add sliced shiitake mushrooms and cook.

  • Meanwhile, chop your soaked porcini mushrooms and fresh or dried tarragon.

  • Add to the skillet: chopped porcini mushrooms, chopped tarragon and the reserved chopped chicken and cook.

  • In a small bowl, whisk together cornstarch and chicken broth.

  • Add the cornstarch slurry to the skillet with your frozen peas and simmer.

  • Stir in 1 pound penne pasta and cook to heat through.

  • Stir in chopped parsley and season with salt and pepper.

  • Place into a serving dish and enjoy!

Meal #3
Beer Batter Tilapia with Red Chile Mandarin Orange Sauce

  • In a shallow dish, whisk together: beer, egg whites, baking powder. Place the all-purpose flour into a separate bowl.

  • Season 4 tilapia fillets with salt and pepper and dredges into the flour and then into the beer mixture.

  • Add the fish to heated oil and fry until cooked through.

  • Meanwhile, in a medium bowl, combine: lemon juice, red chili paste, chopped canned mandarin oranges, chopped cilantro and salt and pepper.

  • Place the finished fish fillets onto a serving platter.

  • Top with sauce and enjoy!

Madras
  • Fill 2 glasses with ice.

  • Add to each glass: vodka, orange juice and cranberry juice.

  • Garnish each glass with orange slices or lime wedges. Enjoy!
