Meal #1
Roasted Turkey with Artichoke-Sausage Stuffing

  • In a large skillet, add the sausage and cook until browned.

  • Add mushrooms, onion, garlic, and poultry seasoning until mushrooms have softened.

  • In a large mixing bowl, add bread cubes, artichokes, parmesan, parsley, mushroom mixture, broth and toss around until bread cubes are softened.

  • Season the turkey with salt, pepper, thyme, rosemary and stuff the turkey with stuffing and in a shallow dish, add leftover stuffing and bake together in oven.

  • Remove turkey and stuffing out of oven and transfer to a serving platter and carve out 2 to 3 cups reserve for Empanadas.

Meal #2
Turkey and Black Bean Empanadas

  • In a bowl combine reserved turkey, black beans, Monterey cheese, cheddar, salsa, and cumin.

  • With the pie crust rolled out, use a 4-inch cutter to cut out 6 circles and add turkey mixture to crusts and fold over, pinch and crimp with a fork the edges to seal and place on baking sheet, slit the tops, brush with egg wash and bake.

  • Remove empanadas from oven, transfer to a serving platter and serve with salsa, lime, and cilantro.

Meal #3
Seared Tuna with Lemon-Wasabi Dressing and Hot Wonton Chips

  • Place tuna on grill both sides until medium.

  • Drop wonton wrappers into oil until golden brown, drain excess oil off wontons, season with salt and hot mustard powder.

  • In a small bowl, whisk reduced-sodium soy sauce, lemon juice, Wasabi paste, sesame oil and dress mixed greens and transfer to serving platter and place tuna steaks on top, garnish with scallions and dressing on top of tuna and serve with wontons.

Meal #4
Margaritas

  • To a blender, add tequila, crushed ice, orange-flavored liqueur, lemonade concentrate, lemon juice, lime juice and sugar (if desired) and blend until smooth.

  • Pour mixture into salted glasses and garnish with straw and a lime slice.
