Meal #1
Herb-Roasted Turkey Tenderloin with Mango, Lime and Ginger Dressing and Roasted Sweet Potatoes

  • Season turkey tenderloins with cumin, salt and pepper, to taste.

  • Saute tenderloins in pan with oil on one side. Then add peeled and cubed sweet potatoes to the pan. Flip the turkey and transfer the pan into the oven and cook until cooked through. Allow to rest prior to cutting.

  • In a blender, add and puree until blended: peeled and pitted mangoes, fresh mint leaves, fresh lime juice, Dijon mustard, fresh ginger and plain yogurt.

  • Slice the rested turkey tenderloins into 1/2-inch slices.

  • Serve 1/2 of the turkey with all of the sauce spooned over the top and alongside the potatoes. Reserve the remaining turkey for Thai Turkey and Rice. Enjoy!

Meal #2
Grilled Tuna with Hot Pineapple-Papaya Salsa

  • Season both sides of the tuna steaks with salt and pepper and place onto a preheated grill pan. Cook for about 3 minutes per side for medium doneness.

  • Meanwhile, to a large mixing bowl, add and combine: diced pineapple, diced papaya, minced red onion, minced Serrano chili pepper, fresh lime juice, chopped cilantro leaves, hot chili oil, and salt, to taste.

  • Remove the tuna steaks from the grill and place over cooked Somen noodles. Spoon the salsa over the top and enjoy!

Meal #3
Thai Turkey and Rice

  • In a large skillet over medium-high heat, add: olive oil, chopped onions, preminced garlic, cubed reserved turkey tenderloin, sugar snap peas and shredded carrots. Cook until the turkey is brown on all sides.
  • To simmering chicken broth, whisk in: rice vinegar, sugar, reduced-sodium soy sauce, and crushed red pepper flakes. Add this stock to the browned turkey mixture.

  • Also add chopped fresh basil leaves, salt and pepper, to taste, to the turkey mixture.

  • Place cooked rice into a serving dish and top with turkey mixture. Enjoy!!

Weeknight Dessert
Peanut Butter and Jelly Swirled Ice Cream with Vanilla Cookies

  • In a large bowl, combine: softened lowfat vanilla ice cream, grape jelly and smooth peanut butter. Gently stir to combine leaving streaks of jelly and peanut butter visible throughout the ice cream.

  • Spoon the mixture into dessert bowls.

  • Garnish each with vanilla wafer cookies and other various toppings you may desire. Enjoy!
