Meal #1
Sage Pesto Crusted Turkey Tenderloin

  • In a blender, combine sage leaves, parsley, pine nuts, olive oil, garlic cloves, Parmesan, salt, and ground pepper.

  • Season turkey tenderloins with salt and pepper, place on prepared pan, and spread the pesto on top of the turkey.

  • Add the halved potatoes in the pan, drizzle with olive oil and place pan in oven and roast.

  • Place half of turkey onto serving platter and reserve rest for Chef's Salad.

Meal #2
Grilled Shrimp with Coconut Curry Dip and Peanuty Noodles

  • In shallow dish, add shrimp, season with salt and pepper and salt-free lemon and herb seasoning.

  • Place shrimp onto grill until cooked through.

  • In a medium saucepan, stir together with a wooden spoon coconut milk, sugar, curry powder, ground ginger. Bring to a simmer, remove from heat and stir in cilantro and transfer into a serving bowl.

  • In a large bowl, combine cooked Somen noodles, sesame oil, place into platter, and sprinkle roasted peanuts on top of noodles.

  • Serve 1/2 of the shrimp with the dip and noodles on the side and reserve the rest of the shrimp for the Island Rice.

Meal #3
Chefs Salad with Applewood Smoked Bacon Turkey and Tomato-y French Dressing

  • Place lettuce on a serving platter and top with reserved turkey tenderloin, carrots, black olives, cheddar, ham, red onion, toss and garnished with quartered eggs alongside the edges of the platter.

  • In a medium bowl, whisk together condensed cream of tomato soup, reduced-sodium chicken broth, sherry vinegar, paprika, dry mustard, salt and pepper.

  • Pour some of dressing over salad and place the remaining in a small bowl to serve alongside. Enjoy!

Meal #4
Island Rice

  • In a large bowl with cooked rice, add the reserved shrimp, which is halved, pineapple, papaya, scallions, lime juice, olive oil, salt, pepper and toss until all combined. Enjoy!
