MENU: From Sit-Down to Chow-Down

Day 1
Pan Seared Catfish with Red Roasted Red Pepper Lime Sauce and Toasted Sunflower Seeds

Meal #1
Pan Seared Catfish with Red Roasted Red Pepper Lime Sauce and Toasted Sunflower Seeds

  • In boiling water, add couscous, turn off the heat and cover.

  • Heat oil in large skillet and add seasoned catfish fillets.

  • In a blender, add: chopped roasted peppers, chopped ginger, garlic, lime juice, ground cumin and puree until smooth.

  • Transfer mixture to sauce pan and simmer.

  • Remove the mixture from the heat and add chopped cilantro.

  • Transfer half of fish on top of couscous and top with red-pepper sauce and garnish with toasted sunflower seeds.

Meal #2
Catfish Hero with Seared Tomatoes and Herbed Mayo

  • Season sliced tomatoes and add to griddle until golden brown.

  • In a small bowl, combine mayonnaise, Dijon mustard, lemon zest, basil, chives and whisk together and spread on sandwich rolls.

  • Build the sandwiches in this order: catfish, lettuce leaves, sliced red onion, tomato slices and serve to enjoy.

Meal #3
Pork Chops with Orange Soy Glaze and Udon Noodles

  • In a large heated skillet add peanut oil, while adding Udon noodles to boiling water until cooked but still firm.

  • Season both sides of pork loin chops and place in skillet until golden brown.

  • In a medium bowl, combine orange marmalade, broth, reduced-sodium soy sauce, sesame oil and add sauce to the pork in the pan until pork is cooked through and sauce thickens.

  • Drain Udon Noodles, place on a platter.

  • Top noodles with pork chops, sauce, and garnish with scallions.

Meal # 4
Sauteed Asian Broccoli Slaw

  • Toast sesame seeds in large, dry skillet until golden brown and add sesame oil and broccoli slaw mix.

  • And then add reduced -sodium soy sauce, lime juice, season with salt and pepper.

  • Serve once veggies are softened.
