And the best part about chicken breast is its versatility. It can be used in soups and salads, and diced or sliced as chicken fingers. Grilled chicken kabobs, hot and spicy chicken fajitas or chicken and broccoli stir-fry are all easy to prepare and ideal for two. Cooking for a Crowd When you're cooking for a crowd at a party, several easy chicken breast recipes are ideal. Chicken pot pie, white bean chili with chicken or even jambalaya use chicken breast as one of their main ingredients. These three recipes are also simple to make, even easier to double or even triple for a crowd and they taste great, too.
