When it comes to healthful cooking and eating, Kathleen Daelemans is "her own best advertisement," having lost 80 pounds when she was hired to create a new regional cuisine for one of the world's most luxurious five-star resort and spas in Maui.

Before leaving for Hawaii’s Cafe Kula, Kathleen Daelemans didn’t specialize in low-calorie recipes or low-fat recipes. She apprenticed at the Yosemite National Parks four-star Ahwahnee Hotel and then moved to San Francisco's renowned Zuni Cafe where she spent four years working closely with chef/owner Judy Rodgers, learning the Provencal and Italian technique that laid the foundation for her unique culinary style. After taking the job at Cafe Kula, she was created an entirely new spa cuisine menu that featured low-calorie recipes or low-fat recipes and in the process lost 80 pounds.

Kathleen Daelemans is the author of the diet cookbook Cooking Thin with Kathleen Daelemans. In it, she combines comedic banter and culinary wizardry with a modern, healthy sensibility. Her cooking techniques yield delicious comfort foods that you’d never know are low fat recipes. Her low-calorie recipes and kitchen tips will enrich and entertain—as well as help to shed pounds.
