
A potent mixture of cachaca (sugarcane liquor), limes, and sugar, a caipirinha provides ultimate satisfaction on a hot summers day. No wonder its Brazils national drink! Now the cocktail of choice in many trendy New York and Miami bars, a caipirinha can cost between $10-12, although its hard to find a barman who can make them just right. To prepare the perfect caipirinha, the limes must be pummeled to perfection. Making a bunch all at once in a pitcher will save you time, but every Brazilian knows its best to make them one at a time. So roll up your sleeves and start grinding. How to make one: Cut half a lime into small cubes, and place them in a cocktail shaker. Sprinkle the lime with a teaspoon of quick-dissolving sugar. Smash the lime with a pestle, spoon or muddler; work it for a minute or two to release all the oils from the rind. Add a handful of cracked ice to the shaker, and pour over all 1 1/2 ounces cachaca (the brand you're most likely to find in liquor stores is Pitu.) Shake like crazy, at least 30 seconds.
