More Than Meets the Eye

Sure, a good ol' ice cream sandwich is basically perfect served just as it is. But have you ever considered the humble frozen treat's true potential? These clever, inventive (and easy!) ideas make ice cream sandwiches totally pedestal-worthy.

Caramel Torte

Stack nine ice cream sandwiches into three layers (so there are three sandwiches per layer) and cover with whipped topping. Use a piping bag to pipe decorative stars of whipped topping on top. Drizzle liberally with caramel sauce and sprinkle with chopped nuts and chocolate chips. The result is a deceptively fancy dessert that mimics the look of an icebox cake.

Ice Cream Sandwich Kebabs

These are perfect for a barbecue (just don't throw them on the grill). Cut ice cream sandwiches into shapes using cookie cutters and stack with strawberry halves on skewers.

Dipped Ice Cream Sandwiches

Add some crunch to ice cream sandwiches by dipping them in melted chocolate, and then into crushed candy bars, nuts and chocolate chips. Set out dishes of the toppings at a party for an easy, playful dessert.

Boozy Ice Cream Sandwich Milkshakes

Blend five ice cream sandwiches, two scoops of vanilla ice cream and 2 ounces dark rum or bourbon until well combined (skip the booze to make the drink kid-friendly). Pour into two, 12-ounce glasses and garnish each with whipped cream, a cherry and an ice cream sandwich quarter.

Grasshopper Pie

Soften a 1 1/2-quart tub of mint chip ice cream and fold in three ice cream sandwiches, cut into small cubes. Pour into a ready-made 9-inch chocolate graham pie shell. Freeze until solid. Top with whipped cream and chocolate sprinkles, if desired. When sliced, the ice cream sandwich pieces will be a fun surprise peeking through all that green.

Ice Cream Sandwich Affogato

The perfect afternoon pick-me-up! Scoop ice cream into Old Fashioned glasses and add chopped vanilla ice cream sandwiches. Pour two shots of espresso into each glass and serve immediately. The espresso will melt the ice cream and soften the sandwich into a silky, indulgent dessert.

Mini Ice Cream Sandwich Pops

Slice a standard ice cream sandwich into six mini sandwiches and insert cute lollipop sticks. Dip the sides into rainbow sprinkles (because everything is better with rainbow sprinkles).

Ice Cream Sandwich Bonbons

Cut chocolate ice cream sandwiches into cubes and dip them in melted chocolate. Sprinkle with a little sea salt before the chocolate sets. Who knew one of of your favorite childhood desserts could be so classy?

Birthday Bear Ice Cream Sandwich

Place a scoop of ice cream on top of a round ice cream sandwich. Add two mini chocolate chips for eyes, one regular-sized chocolate chip for a nose and two chocolate drops for ears. Use a zip-top bag to pipe on a chocolate smile. And finish off Mr. Bear's party look with a sugar cone "birthday hat" on top.

Raspberry Ice Cream Sandwich Parfaits

Layer diced vanilla ice cream sandwiches with vanilla yogurt and raspberries to make this special treat.

Ice Cream Sandwich Place Cards

What better decor for an ice cream social than ice cream itself? Wrap the centers of ice cream sandwiches with waxed paper and affix a printed name on the paper with tape. Place each sandwich in a small dish filled with crushed ice to keep it cold — and tell guests they can indulge as soon as they sit down!
