Get an assortment of pastry brushes for thick sauces and a barbecue mop for thin sauces. Make sure to clean well after every use.
The best way to light a charcoal grill: Place crumbled newspaper under the chimney, place on the grill grate and fill the top with charcoal. When you light the newspaper, the charcoal catches fire. Once the charcoal is white, dump it under the grate and you are good to go!
Disposable Aluminum Pans
These are great for holding food, basting juices and other liquids to keep meat moist, using as grease catchers under the grate and covering food on the grill.
Great for making packets for small foods that could fall through the grates, sealing wood chips to smoke and covering resting meat to keep warm.
Instant-Read and Grill Thermometers
Instant-read thermometers help you cook your meat to the perfect doneness. Most gas grills come with thermometers in the lid, but you might need to get one for your charcoal grill.
Long, Metal-Tipped Tongs
Perfect for turning food while it cooks and holding meat still while you carve. Forks pierce foods and allow those precious juices to run out.
Dip a rolled-up paper towel in oil, then use tongs to swipe it across the grates to oil before cooking.
Wire Grill Brush
Use this to clean off your grill after each use. It's easiest to clean a grill while it's still hot.
The smaller holes keep veggies from falling through the grates, and make it easier to flip fish.
Bamboo skewers are disposable and inexpensive, but their ends burn. Soaking them in water for 30 minutes helps. Metal skewers can be used again and again and don't need to be soaked, making them a terrific time saver.
Great for flipping smaller pieces of meat and fish that are too delicate for tongs.
