Smart Spice Swaps Within a Spice Rack

Instead of: Herbes de Provence
Substitute dried oregano and/or dried thyme. If you're up for experimenting, add a floral note by using a pinch of ground coriander.

Instead of: Saffron
Not only is this spice pricey, but it also can be hard to find. Swap in a generous pinch of sweet paprika as a sub for a few threads, along with a pinch of ground turmeric for the signature golden-yellow glow it imparts to food.
Instead of: Pie Spice
Whether it's for apple or pumpkin pie, ground cinnamon is good as the base of the amount required, but dress it up with any other warming spices you have on hand, such as nutmeg, allspice, ground ginger, ground fennel or any other pie-spice blend!
Instead of: Garam Masala or Curry Powder
So long as you have a jar of ground cumin, you're in business. Season it with other warming spices, including more savory ones like ground coriander or fenugreek. And experiment with more extreme spice notes, like a pinch of cayenne pepper or chili powder.
Instead of: Chili Powder
Ground cumin and paprika make up the base of this blend. Play with the flavor, using a mix of floral notes from spices or herbs like dried oregano, or ground onion or garlic powder. You can add heat using crushed red pepper or cayenne pepper, but dashes of hot sauce can also do the trick.

Dried herbs can deliver the backbone of Italian-American pasta dishes. A mix of dried thyme, oregano and basil mixed with dried onion or garlic powder can turn bread, pasta and tomatoes into Italian-American wonders like garlic bread or spaghetti.
