4 Steps to Healthier Zucchini Bread

What's the secret to trimmed-down zucchini bread? This recipe from Food Network Kitchens features several smart tweaks to create a lighter loaf:

1. Whole wheat pastry flour takes the place of the usual refined white flour, bringing whole grains into the mix.

2. Sugar is scaled back. The recipe calls for 3/4 cup sugar, whereas many traditional zucchini bread recipes can incorporate 2 cups of sugar or more.

3. Oil is used in moderation. One-third cup of vegetable oil goes into this loaf, compared to the typical 1 cup of oil mixed into many zucchini breads.

4. The addition of unsweetened apple butter (a cooked-down blend of apples and cider or juice) ensures that the zucchini bread is still moist, nicely sweet, and delicious!

Total calories are 200 per serving (12 servings/24 slices per loaf). Other nutritional stats: 1 gram of saturated fat (9 fat grams total), 14 grams of sugar, 3 grams of fiber, 170 milligrams of sodium and 31 milligrams of cholesterol.
