How to Make Vinaigrette 3 Ways

Here are three ways to make perfect homemade vinaigrette: whisk, shake and emulsify.

Method 1: Whisk It

Pour one part vinegar into a bowl; add salt and pepper.

Then add three parts oil, slowly, while whisking. When the mixture comes together, your vinaigrette is done.

Method 2: Shake It

Add one part vinegar, three parts oil, salt and pepper to a jar with a well-fitting lid.

Give it a good shake. When the mixture comes together, your vinaigrette is done. This method is great for making extra to keep on hand in the fridge for a couple of weeks. It will separate; shake before using.

Method 3: Emulsify It

Put one part vinegar, some mustard, salt and pepper into a bowl.

Slowly whisk in the three parts oil. If added too fast, it will break. (The mustard helps the liquids form an emulsion.) Taste and season your vinaigrette as needed.

Mix It Up!

Try different acids in your vinaigrette, like citrus. Or use cider, white wine, rice wine or sherry vinegars. You can also experiment with different oils, herbs and spices.
