Don't just spread avocado on bread and call it day. With a few extra ingredients, you can transform basic avocado toast into a breakfast masterpiece. Here are five topping ideas to set you on the right path, including a spicy, egg-topped rendition and a fun, open-faced twist on the classic BLT.

Classic Avocado Toast

What You'll Need: 1 ripe avocado + 1/2 lime + 2 slices crusty toasted bread + sea salt + crushed red pepper flakes

 

What to Do: Cut avocado in half and remove the seed. Squeeze lime juice in each half of the avocado. Mash in its shell and spread over both slices of toast. Sprinkle on desired amount of sea salt and crushed red pepper flakes. 

Spicy Egg-Topped Avocado Toast

What You'll Need: 1 ripe avocado + 1/2 lime + 2 slices crusty toasted bread + 2 eggs, fried + Sriracha + chopped cilantro

 

What to Do: Cut avocado in half and remove the seed. Squeeze lime juice in each half of the avocado. Mash in its shell and spread over both slices of toast. Top each slice of toast with a fried egg, drizzle with Sriracha and sprinkle with fresh chopped cilantro.

Avocado Lox Toast

What You'll Need: 1 ripe avocado + 1/2 lime + 2 slices crusty toasted bread + 2 large thin slices smoked salmon + small capers + sliced red onion

 

What to Do: Cut avocado in half and remove the seed. Squeeze lime juice in each half of the avocado. Mash in its shell and spread over both slices of toast. Top with smoked salmon, capers and red onion slices. 

BLAT Toast

What You'll Need: 1 ripe avocado + 1/2 lime + 2 slices crusty toasted bread + 1/2 cup baby arugula + 4 thin slices tomato + 4 slices thick sliced bacon, cooked crispy

 

What to Do: Cut avocado in half and remove the seed. Squeeze lime juice in each half of the avocado. Mash in its shell and spread over both slices of toast. Top each piece of toast with 1/4 cup baby arugula, 2 slices tomato and 2 slices bacon. 

Blue Cheese and Herb Avocado Toast

What You'll Need: 1 ripe avocado + 1/2 lime + 2 slices crusty toasted bread + 1/4 cup crumbled blue cheese + fresh herbs, for sprinkling (chives, thyme or basil would all be great)

 

What to Do: Cut avocado in half and remove the seed. Squeeze lime juice in each half of the avocado. Mash in its shell and spread over both slices of toast. Top with crumbled blue cheese and fresh herbs.
