  • make preserves using best produce from summer
  • sterilize jars,lids and bands in boiling water
  • Put lids and bands in a saucepan of simmering wate
  • remove jar from water with jar lifter
  • fill jars with hot preserves, leaving headspace
  • eliminate any air pockets in filled jars
  • wipe rims and threads of jars with damp towel
  • remove lids from simmering water with tongs
  • screw on the jars until there is resistance
  • process preserves for 15 minutes in boiling water
  • remove jar from water with jar lifter
  • check seals once jars are taken out of water bath
  • plum vanilla preserves made with firm ripe fruit
  • peach mustard compote made with firm ripe peaches
  • blueberry maple spoon fruit made with fresh fruit
  • spicy tomato jam made with plum tomatoes
  • tomatillo salsa is fresh and zesty
