Baked Oysters With Wild Mushroom Ragout

  • serve oysters right out of the pan

  • scrub oysters with stiff brush under running water
  • hold oyster in palm of hand with towel to shuck
  • insert paring or oyster knife between shells
  • scrape oyster meat from top shell into bottom
  • cut oyster from shell or serve on half shell

  • cook bacon in skillet over medium heat
  • add shallots,mushrooms and garlic to cooked bacon
  • assemble oysters for broiling
  • top oysters with dollop of aioli and broil
