Winning Recipe: Jalapeno-Cornmeal Pancakes
We thought we'd had our fill of pancakes after completing this month's bonus booklet, 50 Pancakes and Waffles. But then Bonnie Stallings of Martinsburg, WV, entered these jalapeno-cornmeal pancakes in our January/February 2010 chile pepper recipe contest, and we found ourselves hungry for one more batch. Bonnie transformed her 30-year-old recipe for Mexican cornbread into this sweet-and-spicy breakfast with a double dose of jalapenos: She puts them in the batter and in the orange syrup. "Depending on how hot you like it, you can always add more!" she says.
