Ingredients

  • 2 dozen eggs
  • 2 (1 1/4 pound) lobsters, steamed, shelled, and chopped
  • 1 tablespoon of mustard
  • 3 shallots
  • 2 tablespoons of mayonnaise
  • 2 tablespoons of capers
  • 1 bunch of minced chives

Directions

Simmer eggs in lightly salted water for 12 to 15 minutes. Run under cold water until eggs are cool, then crack and peel cleanly. Split eggs neatly and remove yolks. In a large mixing bowl blend lobster, mustard, shallots, mayonnaise, capers and chives. Season with salt and pepper. Fill eggs with lobster salad and garnish with chives.

    KEEP IN MIND... I AM ALLERGIC TO EGGS AND HATE THE TASTE OF HARD-BOILED EGGS...but my friend was throwing a party, knew my allergy wasn't life-threatening and begged me to try one. They were so good I demanded the recipe. These were the absolute bomb! Sure I sneezed like crazy because of my allergies but I didn't care...these were so yummy! My friend make two dozen of these and they were gone in less than 20 minutes.

    HIGHLY recommend!

    I made a half recipe on these since there were only going to be 6 of us for a dinner party (and I was making a lot of other foods, too. I also made these with shrimp since I had it on hand. They were amazing & disappeared almost instantly, despite having other appetizers out! I love traditional deviled eggs, but I think this is my new fav! Will definitely make again!
