What a fabulous recipe! I don't make too many veggie recipes but this one is by far the best. I used some frozen fry veggies with peppers and added green peas, instead of pea pods. The mushrooms really make this dish outstanding. Also, the sweet and salty cucumbers are a must, as there are some many depths of flavor. My husband said this was the best stir fry I have ever done. Leftovers were great today

this is so good especially the mushrooms my family was addicted severly althought the noodle bowls coud have used more veggies and made more than 4 servings for my family

I honestly wasn't expecting it to be this great. I, like most other reviewers only made the noodle bowls. I left out the Garlic, and the Ginger and added in Pineapple chunks, and bean sprouts. Next time I think I will add in some type of meat, carrots and celery.

I don't like that this recipe is one big jumble, with a huge list of ingredients for all three dishes. I would have preferred three separate recipes, one for each dish. I only want to make the noodle bowl and have to sort out which ingredients and instructions are for the noodle bowl. It looks wonderful on TV.

I only made the noodles, but I made some major changes. I realized when I started cooking that I didn't have hoisin sauce, but I did have oyster sauce. I ended up using the oyster sauce, added tons more edamame and other veggies and it turned out better than I had expected. I thought the lime and cilantro really brightened up the taste. And the best part is that it's really healthy. I am definitely going to make this again.

First of all, I didn't make the cucumber salad (I hate cucumber!
The mushrooms were amaaaazing.....but i left out the grill seasoning because I didn't have any. I sprinkled some dried chili flakes on them before roasting. Turned out perfectly.
The noodles were really good too. I added extra edamame (because I love it and extra hoisin (based on what others said. I also used real soba noodles and I added some tempeh pieces that I marinated in 1 tsp rice vinegar and 1/8 cup tamari. I wholeheartedly recommend that you try adding those things and you'll have an even better meat-free meal!

The hoison noodle bowls are very easy to make and taste delicious. My husband and 3 year old daughter loved it. It is a wonderful vegetarian dish full of protein and veggies. I would definitely recommend this dish.

The noodles are good, the cuke salad too sour. I added extra hoisin after reading reviews. My family loved it. The mushrooms are the bomb.

I'd give 4 stars to the cucumber salad recipe - it is very tasty - husband loved it too!
The mushroom dish I wasn't sure about - was I supposed to remove the stems? The flavor was nice though.
The noodle bowl - well - it did seem like too much pasta for the amount of veggies - and the sauce wasn't really that saucy. I love the use of edamame though - I think next time, I'd add cashews and maybe more vegetables - like broccoli. I didn't quite get the use of the cilantro leaves - I thought that was more of a mexican addition...that didn't really work for me.
