    This was gross. We had to throw it away and order a pizza. I followed the directions exaclty and used all recommended ingredients. The salad was o.k. though, but the eggplant steak was awful took one bite and in the trash they went. Sorry Rachael usually I like your stuff but this was a no go.

    I used this recipe in about 2007 when I first saw it on her show.I went to the store the next day to get all the ingredients and I went home to attempt to try it. Well when I was done I sat down and I cut into the eggplant like it was a steak. OMG.. It was the best thing I have ever tasted. Soooo good. If you are on a diet and you want to stay away from meat for a little while, this is a great sub for a steak. I loved it.. I love all of Rachael's recipe's she does a great job.. Try It.. you'll love it...

    I made this recipe at 2 different times, I wish they would separate the salad from the main dish. Anyway, The Eggplant steaks were good, but alot of work I thought. They definately were tasty and I would probably make them again for guests, however my husband wasn't that keen on them. The salad however was absolutely delicious!! I give it 5 stars! It was quick, simple, easy, and extremely flavorful! The lemon vinergatte makes it!!

    I'm not big on the mediterranean ingredients so I switched it up a bit. Everything the same up until the hummus. After piling on the spinach/pepper mixture I sprinkled parmesan cheese & topped with shredded mozzarella. Fantasic! Didn't make the orzo but served it with Rachel's recipe for Mom's Tomato & Bean Stoup. Again, Fantastic! My husband & mother-in-law absolutely loved it. Definetly a keeper

    i love this recipe!!! I added sun-dried tomatoes. Vegan and yummy. I only gave it 4 stars instead of 5 bc its not as filling as i would like but thats just bc its vegetarian

    I saw Rachael Ray making this on her TV show last week. It look so yummy, I made it last night for my guest and they went mad over it asking for the recipe. I have to add, I made the Orzo Salad the day before it can be served cold or heated in the microwave. I didn't have a grill, so one of my friend is going to make hers today and is going to dip the Eggplant in egg and bread crumbs and cook a few min's; in the frying pan with E.V.O to make it crispy. I'll let you know how hers turns out. Yes, I intend to make this recipe for my vegetrians guest next week. Thank you. Adrianne

    I am known as a good cook and when I made the steaks for friends and family
    from Montreal to Niagara Falls, and everybody loves them. the only thing that I did different was using already seasoned bread crumbs.
    Love 30 minute meals!!!!

    I love the flavors of eggplant and spinach when combined in this way. I have made this dish a few times and changed up the flavor of hummus. I omit the roasted red peppers but stick to the recipe otherwise. My boyfriend looked at this like a punishment when I place it in front of him last week but surprisingly enjoyed it! He even requested it again, which is a testiment to the flavor.
    Try this for yourself before judging the recipe.

    This looked fabulous when ready to go in the oven. My husband and I couldn't wait to try it. We have been trying to include at least one vegetarian meal each week and I thought this was worth a try. First let me say I only tried the eggplant, not the orzo salad. Assembled, it looked great - cooked it was awful. I pride myself on being a really good cook - thank God I didn't try this on company. It was a disaster. Not worth the time or effort.
