Ingredients
- 1 large bundle broccoli rabe, about 1 1/4 to 1 1/2 pounds
- Salt
- 2 tablespoons extra-virgin olive oil
- 1 pound bulk Italian hot or sweet sausage
Directions
Trim ends of the broccoli rabe and cut into 3-inch pieces.
Bring 2 inches water to a boil in a high sided skillet. Salt the water. Add the broccoli rabe and simmer 10 minutes, drain. Return skillet to the stove and heat extra-virgin olive oil over medium-high heat. Add sausage, brown and crumble 6 to 7 minutes. Add the broccoli rabe and stir to combine.

This was my first attempt at cooking broccoli rabe. Easy and delicious.....much better than any I have ordered in any restaurant. I did make two changes to the recipe though. I simmered slivered garlic in with the broccoli rabe and deglazed the sausage pan with a little chicken broth. I loved every bite. Thanks, Rachel.

Okay, I cheated a little. I added fire-roasted tomatoes to this recipe and it was FABULOUS! With a little shredded parmesan on top (oh yeah, added that too. It was fast and I may never eat grown-up broccoli again. But the tomatoes added enough juice to sop up with a piece of garlic parmesan french bread. Did I not mention I added the bread? My bad.

This is a very tasty and easy dish to prepare. I've made it several times now. I always put mine on top of mashed potatoes and it is always excellant! This time my grocer only had mild ground sausage available so I sprinkled Goya Adobo seasoning w/lemon pepper (yellow cap, salt and pepper on the sausage while it was cooking. My husband said it was the best broccoli rabe I've made yet! Thank you Rachel Ray for all you do and the wonderful recipes you create.
