this is a good recipe for eating carnitas but not very good on how to cook carnitas. i have been making carnitas for many years. the best for me is to cook until tender in seasoned water. when all the water cooks out you let the carnitas brown lightly in there owne juices. a little secret is to add a can of coke to the water this makes for a better glaze. just a hint.
