Forget the hassle of prepping limes and the potential overwhelming or bitter taste. I used slightly less than 1/2 cup of lime juice from my little plastic lime from the grocery store (all I had in the houseand filled up to the one cup line with Monin Coconut Syrup. What a amazing experiment -- it gives a wonderfully potent lime flavor tempered by the coconut flavor - an absolute symphony on the tongue!! If you like coconut; you must try this variation. I won't ever vary it again!

This dessert turned out AWFUL!!! I did it exactly as the recipe called for, HOWEVER, they should have said to peel the limes or something! Obviously this would be more time consuming, but would clearly make it MORE edible!! I made it with the real key limes blended up with the water...just simply tastes awfully bitter! Anyway, I will try it again and SQUEEZE them instead. Good luck...and remember, SQUEEZE not BLEND!!!

To the previous question about water - It's in the very first sentence. The water is for using with the fresh lime version. Anyway this recipe is perfect and authentic! Recommended!

Blending up the whole key limes made the juicing process a breeze, but people complained that the pie was bitter.

Watched this episode prior to a trip to the Keys. Stopped in to try this pie at the Cracked Conch. We then began our Key lime pie tasting tour. This pie and the pie at the Blond Giraffe in Key West were the best of the 16 pies we tried while in the Keys. I used this recipe for my husbands birthday and it was a great hit. Brought a little bit of the Keys to New England. Make sure you use Key lime juice it make it perfect.

Sorry, but we ended up having to throw this pie away after just a few bites because the lime juice taste was literally so overwhelmingly overpowering that it made it impossible to eat more than a couple bites before deciding we really couldn't handle the strong taste.

So I re-did the recipe and instead of putting 1 whole cup of lime juice in it, I reduced that to only 1/4 of a cup of the lime juice, and then to replace the other 3/4 cup liquid, I added regular sweetened pineapple juice instead to make sure there was enough liquid and to reduce the lime flavor in it to an edible level.

If you wanted to you could try up to 1/2 cup lime juice and 1/2 cup pineapple juice, just to see if you like it better, but honestly the lime flavor still came through quite well by reducing to 1/4 cup lime juice and 3/4 cup pineapple juice.

Came out absolutely wonderful with the pineapple juice substitution! My husband also added a little sweet coconut to the top of his piece of pie before eating it, and that was a tasty addition also.

This pie recipe (with the changes suggested is a very light, totally refreshing pie and we will definitely be making this again!
