Ingredients
- 2 cups medium diced sweet potatoes
- 1/2 cup raisins
- 2/3 cup finely diced red onion
- 1/3 cup finely diced celery
- 2 teaspoons freshly grated ginger
- 1/2 cup mayonnaise
- 1 tablespoon finely chopped parsley
Directions
Cook potatoes until they are fork tender in boiling water. Drain the potatoes and cool them completely. Soak the raisins in hot water for 15 minutes and then drain. Combine all the ingredients and mix them thoroughly, but gently. Chill for 24 hours before serving.

This is really good--but I added another cup of sweet potatoes, making it 3. Otherwise, for me, I think it might've been a tad bit too mayonnaise-y for us. I might try adding some diced pineapple the next time, too. A welcome change from regular potato salad, and so easy!

This was surprisingly great!! I like a good potato salad, and this was even better than I expected. I didn't think I would like the ginger in it, but it added a very tasty and slightly Asian or Hawaiian flavor. The raisins were also good and fruity in the salad. Perfect just as written.

So favorful! My family loved it. Such a nice alternative to using a white potato... Nice sweet flavor!! YUM. Also I added more ginger than it called for and some mustard. It needs a touch of acidity! And I used cilantro too.
