    Excelent, simple & very tasty! My first attempt at a Food Network recipe and it was a snap. I left out the brocolli, and substituted a canola/vegetable oil blend for the clarified butter, and red pepper for the green pepper. Came out kind of like a cross between scrambled eggs and an omlette, but tasted great and defenitely will be one of my favorites.

    I would cut the butter to only 1 tbsp. It was very good, I enjoyed the broccoli in it, I never thought to put broccoli in eggs before. I would put the tomatoes in with the broccoli rather than the onions, they were a bit over done and lost texture and flavor. I didn't add mushrooms to mine and I used colby/jack rather than muenster.

    This is just a killer "omelet". You can use just about any leftover ingredient in the house with an appropriate cheese. Ihave made all kinds of different toppings and nothing could be simpler. A real winner.
