Prepare a grill or grill pan for medium-high heat. Lightly oil the grill grates.
Sprinkle the steak with salt and pepper, and grill to the desired doneness, 4 to 5 minutes per side. Let rest 5 minutes.
Stir together the guacamole and sour cream in a small bowl. Season to taste.
Combine the tomatoes, jalapenos and some pickled carrots and pickled onions in a medium bowl, then fold in the cilantro.
Scramble the eggs in melted butter in a nonstick medium skillet over medium heat. Season with salt and pepper.
Heat the sliced sausages in a skillet.
Thinly slice the steak. Top the tortillas with some avocado crema, then add the scrambled eggs, steak and sausage. Top with pico de gallo and serve immediately.
