Could I replace the cod with wild Pacific salmon ?
Hi, I am really excited about that recipe and would like to make it for an upcoming event I have. the problem is some of my guests do not like cod, therefore I was thinking of replacing with wild pacific salmon, which they love ! Does anybody know if it would work well ? Thank you

This is a winner !!!
I found this recipe to be very easy and quick...my husband fell in love with the fish and has me cooking it all the time. I have also used flounder and catfish fillets with this recipe as well and it was very good. Thank you Aaron for adding alittle variety to my menu.

Excellent preparation for fish filets
Like several other reviewers, I appreciated the preparation technique in this recipe. It was quite a change from my standard preparation (simple oven roasting) and a welcome one at that, although the method bumps up the calorie count considerably. But heck, the flavor was superb! Next time I think I'll skip the chive butter sauce, esp. if I'm serving family on a week night, as opposed to company. A simple lemon butter thyme pan sauce works really well, as others have noted.

technique
I love the cast iron skillet technique Aaron uses here, and for that I give out a rare 5 stars. Some of the recent reviews were disappointed by the flavor but I like to appreciate the light flavors of fish. For me, the chive butter sauce was actually unnecessary. Next time I'll do the pan sauce with a splash of white wine (vermouth actually) and throw the chives on top.

Loved it!
This was a great recipe, loved the pan to oven technique. This fish was moist and the breadcrumbs crisp. I did add some cayenne to the fish, just because I felt like having a bit of a kick, it was awesome!!! Thanks Aaron!

not so good
I was not impressed with this recipe. The fish alone was plain, and needed a lot more seasoning and the sauce took forever to minimize and then tasted bland and boring. Followed the directions but just didn't like it.

Like the Cooking Technique
I made this fish for a Father's Day meal. My husband really enjoyed it and my eight year old said it's the best fish she's ever had! I wouldn't compare the fish to fish sticks, as a previous reviewer did. However, with any recipe, you have to make it your own. For additional flavor, you could add your preferred seafood seasonings to the fish before cooking. You can also use a different white fish. I used the frozen cod, which I probably won't use again, because I usually don't like the texture of previously frozen fish. I used egg whites instead of a whole egg because I had some on hand, and had no problem with getting the panko to adhere. You do have to slightly press the panko into the fish, so keep that in mind. I liked the cooking technique, however. It was quick, reliable, and left the fish moist. Grapeseed oil is too expensive, so I used olive oil instead. I did not make the wine sauce, but instead, make a simple lemon butter sauce with garlic and capers.

Basically Fish Sticks
This recipe has so many 5-star ratings with great comments and I am just stumped! I tried the recipe using halibut. It tasted like I was eating plain, bland fish sticks and after re-reading the ingredients, I can see why -- fish, salt, pepper, plain panko bread crumbs.... and no seasonings whatsoever. I should've known. Perhaps some garlic or onion powder would've helped some. And the sauce was bad. I think I let my 2 cups of wine reduce down to about 1/4 of a cup and still it never thickened to any consistency near a syrup. After I got done putting the butter, cream and lemon in it, it just tasted like lemony wine sauce and I don't care for the taste of wine in my food. My daughter suggested that we just put tartar sauce on the fish. Won't try this again -- waste of expensive fish and wine.

Excellent!
This was the first of Aaron's recipe's I tried and I think it's fantastic! I followed the recipe exactly and it was delicious. I loved it actually better the next day, the flavors really came through. Next time I would probably try a more tender fish like halibut but the cod was absolutely fine.

My husband and I absolutely loved this dish. I watch you all the time...I have you programmed to tape so I don't miss one single episode! I followed you recipe and it came out delicious...my husband was so impressed and he is always asking for me to cook this dish. I wish you would do a couple of episodes where you hide the vegetables into dishes (I can't get my toddler son to eat any) I think your dishes would be fabulous because you're big on FLAVOR! Restaurant Quality
My family and i adored this recipe! I also had some problems with the sauce as it seemed to never become syrupy. When there was less than a cup of wine left, I just stopped reducing it and made it. To thicken, I added a little cornstarch. I also used orange roughy instead of cod because that is what we had on hand. I loved it! The sauce tasted fantastic! Everyone felt like they were eating a five star meal! (I served it along with the sweet potato puree and a salad) THANKS!

Excellent Fish, unpalatable sauce.
The fish was delicious. The sauce on the other hand was extremely disappointing! It was extremely tart and unpalatable. I tried to salvage it, but ended up throwing it in the garbage and serving the fish plain. If not for the sauce I would give this 4.5/5. Thanks.

Flakiest Cod Ever!
I've been known to improvise a little too much. Not with this recipe though. I followed it exactly, and the fish was EXCELLENT! I HAD to improvise with the sauce. Following the recipe, my wine reduced almost completely before it got syrupy. I started over, and had to add many ingredients. It turned out fine. I'd give this 5 out of 5 if it weren't for the sauce.

Outstanding dinner - really impressed company!
I watched this episode and I had to try it. I was having friends over and I wanted a nice meal. This turned out really well. The cod was super easy to make and it turned out just like the show. The butter chive sauce was a great addition as well. I think that I didn't let the wine reduce enough and my sauce was a little thin. I added some flour to thicken it slightly and this worked. I would definitely recommend this recipe and the other recipes from the episode. The presentation was "restaurant quality" and I think it was a great choice for company. Thanks Aaron... I am very impressed with your show and the quality of your dishes.

Great Crunch!
I admit, I am not a big fish person but after watching the episode, I just had to try it! I'm not big into cream sauces so I left the sauce off and added an extra squeeze of lemon and black pepper and it was the most delicious fish ever. Great crunch! I supplemented a small filet with seared scallops circa Alton Brown and added some braised red cabbage. Delicious!
