    YUM!!!! The blackening spice is on POINT! I used "Italian Seasoning" in lieu of the thyme and oregano. Perfect!

    Great, simple to make. I have a 16 month old & 4 year old so its good to find quick meals. Makes a good sandwich too. I really enjoy watching Aaron McCargo's show. Nice to watch his upbeat personalty. His love for cooking shows through.

    I have made this so many times that I finally decided to review it. It's spicy without being overwhelming. My brother in law and my 10 yr old nephew love it and believe me they are a tough crowd to please.

    I followed the recipe and made the blackened tilapia. It was great. I was concerned about cooking fish because I am new to cooking it at home. The cooking process was simple and the fresh lemon added a grat touch. The leftover fish tasted great as fish tacos later. Bold flavors!

    I made the Blackened Tilapia for dinner last night, and boy or boy was it the most delicious fish I had in a long time! The fish was tender and moist, and well flavored too! Now, I had to make a few modifications for I didn't have the exact spices in the recipe. On the left is what Aaron used and on the right with the arrows is what I substituted.


    3 tablespoons smoked paprika ---------------> Hot Hungarian Paprika
    1 teaspoon salt----------------------------------> none
    1 tablespoon onion powder
    1 teaspoon ground black pepper
    1 teaspoon cayenne pepper------------------> Red Crushed Peppers, ground
    1 teaspoon dried ground thyme-------------> Thyme Leaves
    1 teaspoon dried oregano
    1/2 teaspoon garlic powder-----------------> 1teaspoon Garlic Salt
    ---------------->1teaspoon Hot Jamaican Curry
    ---------------->1Tablespoon Seafood Seasoning

    All in all it was delicious....I think I'll try this on shrimp too!

    Thank you Aaron for re-introducing me to fish again.
