Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup peanuts, roasted
  • 1/2 cup almonds, blanched
  • 1/2 cup chopped walnuts
  • 1/2 cup sweetened coconut
  • 2 tablespoons brown sugar
  • 2 tablespoons molasses
  • 3 tablespoons peanut oil
  • 1/2 cup raisins
  • 1/2 cup coarsely crushed graham crackers
  • 1 pint blueberries
  • 1 quart vanilla yogurt

Directions

Preheat the oven to 275 degrees F. Lightly grease a half sheet tray lined with parchment paper.

In a large bowl, combine the oats, peanuts, almonds, walnuts, coconut and brown sugar. Mix well. Add the molasses and peanut oil. Toss well until all ingredients are evenly dispersed and coated. Spread the granola out evenly on the sheet tray. Bake in the oven for 60 minutes, stirring occasionally to achieve even color.

Remove from the oven and transfer to a large bowl. Fold in raisins and graham crackers. Stir the blueberries into the yogurt in a small bowl. Spoon the yogurt into serving glasses or bowls and top with graham cracker granola.

Love It, Love It, Love It!!!! I've made this several times over the past 6 months. After I make it, I put it in a ziploc freezer bag and store it in my freezer until I'm ready to make my yogurt parfaits. This granola recipe allows me to use it in so many different ways. I place it on my buttermilk pancakes just before I flip them.

I liked this recipe, but I tweaked it to fit my individual taste. I double the recipe and added 1 1/2 tbsp of vanilla and I only used 2 tbsps of molasses and added 2 tbsps of honey. I like the honey taste better. The only thing that I would change the next time I make this recipe is not to added the graham crackers. It made it too dry!

I loved this granola recipe. It's nice to be able to control the sugar and contents of your granola. The store bought stuff always seems healthy until you start reading the ingredients. I used more almonds in this recipe and omitted the graham crackers. I'm sure they would make it even tastier but I was trying to cut down on sugar. I also used veg oil instead of peanut and it tasted just fine. I served it with Greek yogurt for extra protein.
