    Need to use a food processor

    I liked this dish, but next time instead of just shredding the chicken I'm going to pulse the chicken a few times in a food processor for a more consistent texture. I didn't like biting into it only to have a chunk of chicken fall out. I didnt see the episode so I didn't see how Aaron did it. Also, could use some more hot sauce or maybe just a hotter product than Franks. Our family usually pours Krystal brand hot sauce on just about everything. The blue cheese dip was right on! Love the show! Keep the great recipes coming! Oh and if you haven't tried da spot chicken sandwich - you gotta try it !!!!!!!!!!!!!!!!! SO GOOD!

    Everyone raves about how good these balls are! Sometimes I add finely chopped jalepeno and cayenne pepper for a bit more heat. Also I make them a little smaller to get 25 balls per Costco rotissiere chicken.

    I made these for a potlock party and they were gone before any of the other dishes. I finely diced the scallions and increased to 1/2 c. for extra flavor. I did refridgerate the balls for about 10 min. before i rolling them in the flour/egg/panko. I think it made the balls stick together better during the frying process. Next time I will add more hot sauce. It's perfect heat for kids, but for grown-ups it could use a bit more kick to it. Everyone raved about them. I will definitely make them again!

    Just made these to take to a party this evening. They're warming in a crockpot as I type. Absolutely delicious! My brother referred me to this recipe as he's made them before. I doubled the recipe (except for the black pepper), used 2 rotisserie chickens etc. Made them the size of large superballs so they were quite large, which was fine. Less time slaving over the deep fryer. Added almost a cup of hot sauce to kick it up a bit. Will definitely make them again. Also slightly mixed the chicken in a food processor beforehand, no problems whatsoever with the balls falling apart. Bringing blue cheese dressing and added chunky blue cheese AND ranch dressing for those that don't care for blue cheese. Was running short on time so that is why I didn't make the dip recipe here.

    Buffalo Chicken Cheese Balls are a Hit!

    I saved this recipe in Jan but didn't make it until October for Bunco Night with the ladies from my church. I adapted the reciped to make the balls smaller...more like half the size of a golf ball. WOW! Was it a hit! Even though making them smaller, I had several more than the recipe indicated there were only two leftovers from the event. Everyone loved them and wanted the recipe. I will definately make them again. Also, I didn't have blue cheese, but had chunky blue cheese dressing so I used that. I also used a bit more hot sauce, so it had a bit of a kick. It was a little creamier, but still tasted great. I will definately make these again!

    Unbelievably Delicious and Easy!!

    I made these tonight for my husband and myself. We loved them almost to the point of making ourselves sick we ate them so fast. I did not experience any problems with the balls falling apart. The only thing I did was to make sure the chicken was broken into very small pieces and I used very finely shredded cheese from a package. I added the hot sauce after I hand tossed everything else together well, then chilled the mixture for about 20 minutes beore forming the balls. Also, the chicken I bought was still warm and juicy so I made sure any of the chicken juices left over were poured into the bowl as well. Like a previous reviewer wrote, these balls definitely get bigger after breading, so make them about 1 inch wide for the perfect size, otherwise they will be a bit large. I can't wait to make these for the next potluck or gathering. I'm sure everyone is going to love them just as much, and as much as I want to share this recipe with everyone, I think I'll keep this my little secret so nobody else can steal my thunder haha. Thanks for an awesome recipe Big Daddy!

    me and my sister experienced this delectable appetizer, and it was wonderful. I wish I could get this in restaurants, but unfortunately I don't know of any that make a great appetizer such as this, so for now I have to make it everytime I want it, which is once a week.

    I made these the day before the Superbowl and put them in the refrigerator so that all I had to do was bread and fry them the next day. They just crumbled on me. I swore I would never make them again. My family was devastated because they absolutely loved them. I said that they were far too labor intensive compared to wings but the taste won me over. I have made them several times since then and they have become easier to make and I have tweaked out my problems to find the right consistency. I think that the chicken absorbed all the the sauce which took away all of the moisture that was holding it together. As for the person that said that they did not have enough flavor, then add it to suit your tastes. We always have to triple or quadruple hot sauce in a recipe because that is how we like it. Recipes often have to be tweaked a little to suit your tastes. This is how you make it your own, by making changes and substitutions. Aaron, keep up the good work. We love your recipes. Be sure to try Daspot Chciken Sandwich and Fall off the Bone Ribs from Aaron too. They are crowd pleasers.

    I MADE THESE BALLS FROM HEAVEN FOR MY FAMILY AND I COULD NOT STOP EATING THEM LONG ENOUGH TO GIVE ANYONE ONE , I USED LEFTOVER CHICKEN THAT I HAD NO IDEA WHAT I WAS GONNA DO WITH AND INSTEAD OF SCALLIONS USED ONIONS WHY NOT THEY ARE IN THE SAME FAMILY AND USED SEASONED BREAD CRUMBS AND ALREADY SEASONED FLOUR AND LOVVVVVVVVVVED IT CAN NOT WAIT TO TRY ANOTHER RECIPE FROM BIG DADDY.

    This was a real hit. I made these the day before and kept in refrig overnight. I do not have a deep fryer so I used veg oil in electric skillet @ 350. I cooked for approx. 5 minutes, turning once til just lightly golden color. I also used Italian panko bread crumbs as others had suggested. I suggest picking the chicken into small pieces and rolling into size of a cocktail meatball. I did not have any trouble keeping mine together that way. One chicken made approx 32 small chicken cheese balls. I did not cook until right before my guests arrived. I served with celery sticks and I used ranch dressing instead of the blue cheese sauce (my guests do not care for blue cheese). Do yourselves a favor and try these. I will certainly make these again and again. Thanks Aaron!!

    Simple, Needs more cheese and more spice, easy to make it can be changed to suit yoour taste I think I will do that next time change some ingredients and add more spice! turns our very pretty nice presentation.......Try not to roll them any larger than a 1 inch diameter once breaded they get bigger!
