Excellent soup, rich with flavor!! My family LOVES this soup!! I followed the recipe to the letter and it turned out fabulous. Super easy and great! I've made this about five times now and will make again. This recipe is a keeper.

Never made anything like this before. It was awesome, all of the other reviews were very helpful and right on point. Hubby loved this soup. I made some changes because I was lazy and missing items: used left over chicken but did not add it to the soup until the last 45 mins so it would not over cook, put everything in a slow cooker for about 4 hours (did not pre cook the onions, etc, did not have flour so used corn starch - took about 4 tbs to get it thick enough for us, added two cloves of fresh garlic.
I will make this again...it was super easy and tasted Great.

Even my 83 year old grandmother, who is picky about her food, finished her bowl within minutes.
My mom loved it and I devoured it. Plan to take some to work for lunch tomorrow.
This soup rocks and I plan to make it again.

This recipe is delicious. Light, flavorful, and filling, and I loved the pie topping broken up into bits on top of the soup. I also keep parmesan rinds in the freezer and placed one of those in the soup, so yummy! will make again soon

This was good soup, my hubby really enjoyed it. I made a few changes to suit my taste. The potatoes definitely had to cook longer than the 15 minutes suggested.
Sauteed diced carrots with the celery and onions in 1/2 cup butter with a bit of olive oil.
I don't like Italian Seasoning so I used parsley, tarragon, marjoram, and white pepper.
Used about a cup of frozen peas as a substitute for the mixed vegetables since I had thrown in the carrots.
Used 2% evaporated milk instead of heavy cream
My pie crust was frozen so I went without, my husband topped his with cheddar flavored Goldfish crackers...he said it was good. I'm not sure about that one.

The most delicious soup. It was hearty but not heavy. I deboned a roasted store-bought chicken and used organic boxed broth. This soup is so good is doesn't need the pie crust topping. I will make this recipe at least once a month.

My family loved this recipe. I used biscuits instead of the pie crust and just crumbled them on top in the bowls. I think next time I will hold back on adding the chicken with the potatoes as I felt it was alittle over-cooked but all in all fast and easy.
