    This chili was amazing. Made it very true to the recipe, and my husband and I were both blown away. Almost skipped the sour cream, but it really worked deliciously to cool some of the spice of the chili. Nice! Highly recommend as an alternative to more typical chili. SO good!

    This was only my second time making chili so I was a bit nervous about deviating from using ground beef to make this, but WOW - I surprised myself. I must say this was a fairly easy recipe to prepare and even easier and pleasurable to eat. Aaron presented an excellent recipe that I had to share with my other friends.

    There are a couple of things to note: I used ground chicken instead of cutting up chicken breast and I left out the sour cream (didn't even miss it....

    I was intrigued by this recipe . I thought it looked delicious when Big Daddy made it....AND IT IS! I am a weight watcher, and doctored it a bit....I used evaporated skim milk instead of cream, and used a blend of canola oil and Smart Balance Spread and light sour cream, and it still tasted rich and delicious. I also added extra veggies, like corn and chopped carrots so it was like a fiesta chili! My husband said he preferred this chili to the traditional chili with tomatoes. My son hates tomatoes, so this recipe is a winner with him, too.

    Chunky Chicken Chili is now in my recipe collection as a repeat treat! Thank you, Big Daddy. I LOVE your show!

    It was way too rich for my family. Heavy cream and chili powder do not mix in my opinion and this was not chili. I cut back on the cayenne to 1/2 a teaspoon and it was still way too spicy and we love spicy food. The recipe was written wrong, with parts missing as what to do with all the butter. Why are so many recipes on this site written incorrectly?-someone should really fix that. I don't use recipes from this site often because of that fact.
    I love Big Daddy and his show and this was the first recipe I've tried from him. It disappointed me and my family but I guess it was just us, because there are so many good reviews. All I know is ,I won't make this again. I have a much better chicken chili recipe. I will also say this turns an unpleasant color-a pink color from the cream and chili powder. This is not a white chili like I thought it was.

    Made this chili once already it was fantastic and wayyy easy to make. I love many of the recipes from his show.. and loved that it was different with chicken!

    I went online today looking for a one pot recipe I could prepare for my family tonight. I have always loved Big Daddy's shows and so many of his recipes get great reviews so I thought I would try this one. I was unable to find the cannelini beans (which are white kidney benas at my local walmart so I got navy beans instead. However, when I got home I did have one can of cannellini beans so I ended up adding two cans of navy beans and one can of the cannellini beans- making it a total of three instead of two cans of benas- which was great since I like beans. I cheated and bought pre diced red peppers, green peppers and onions from the produce section. The flavors were incredible and the taste is unbelievable and it had the perfect amount of spice. My husband came home and asked what the great smell was, when I told him chicken chili he did not look excited. Once he tasted it- he LOVED, LOVED, LOVED. I served it with cornbread and this is definitely one I will make again.

    I just loved this recipe...You make it look so easy I just had to try it! My friends don't even mind being guiney pigs for my recipes any more since you won the NEXT FOOD NETWORK Star! Keep them coming!

    I've tried different chicken chili recipes over the years, but this is the first one my husband liked...and he not only likes it, he thought it was great. Not "hot" per se, but flavorful with spices. Very good flavor. We will definitely be making this a stable in our household!

    This was my first attempt at a chicken chili and while my friends tell me it ain't chili unless it's made with beef, this was mighty fine. The instructions, however, are a wee bit flawed in that you are told to make the roux before sauteing the onions and peppers so beware of that (note that the second half of the butter is needed for sauteing the veggies. I also browned my chicken whole (seasoned with some poultry seasoning and then cut it after it was cooked -- I have better results that way with the chicken being more tender. I too added corn as suggested by several reviewers which added a nice touch. Since my family prefers a less spicy flavor, I omited the cayenne, and substituted smoked paprika for the cumin. I also substituted scallions for the parsley as the garnish. All in all, this is a wonderful one pot meal which I will definitely make again -- note that it also freezes well if you make a double batch.

    I have made many different white chicken chili recipes and this is by far the best my husband and I have ever tasted. It was creamy and smooth but still had a nice spicy kick.

    I did modify the recipe for us, though...I halved the cayenne, chili powder and black pepper, added an extra can of cannelini beans and added more red and green pepper. I did take the other half of that stick of butter and make the roux with it. That wasn't in the directions but I think that's what Big Daddy would have done :

    Great work, Big Daddy. My husband and I love you, your show and your food. Your show is the only one on Food Network that my husband watches and says "Now THAT I want to eat!".
