GREAT recipe! Followed another reviewers tips on making the roux. Omitted the cayenne...loved it!

Like another reviewer, I also won a chili cook-off with this recipe! My tweaks were: 3 lbs of chicken, a whole red pepper diced, a whole green pepper diced, only one teaspoon of cracked black pepper, and then at the end I added two large heads of roasted garlic very coarsely chopped. It was awesome! I also made a batch of the original recipe to the T and I think it was equally as good. Thanks for such a great recipe Aaron.

I love this! I have a daughter that can't eat all the acid in traditional chili, and she doesn't eat alot of red meat. So this is a great dinner for our family! We also make cheddar cornbread with it!!

Delicious...I used a 1/2 can of jalapenos instead of chiles, only becuase that's what I had on hand. I did extra bell pepper, 1/2 turkey (leftovers and 1/2 chx. I didn't drain the beans, and added a can of lt. red kidney beans. SO good!

AMAZING !!!! The flavors are awesome - very easy to make - extremely tasty. Ingredients used are those in your frig. Make sure you try this recipe first before trying any other one.

Very tasty recipe but the instructions are a mess! I have made it several times and finally think I have the key .Definitely read other reviews too but here are my pointers. Use only 1 tablespoon of the butter to brown the chicken. remove the chicken and saute the veggies in three tablespoons of butter until they are soft and then add spices and stir let the spices absorb into the veggies. We have small kids so we do not use chili powder instead we use 1 tsp garlic powder and 1 tsp Paprika with the other spices. THEN, add the other 1/2 stick of butter and then the flour to make the roux and proceed as written. When we added the chicken back in we also added a cup or so of frozen corn nibblets and it added a great extra level of flavor.

i've made this chili twice and my boyfriend and I love it!!! im making it for his parents when they come to visit and im going to add rice because i do not add the beans. If you do not like spicy food then you may not want to add the cayanne pepper. but this is a great recipe!!!
