Cinnamon Apple Cranberry Sauce

Ingredients
  • 2 cups cranberry juice
  • 1 (6-ounce) bag sweetened dried cranberries
  • 1 cinnamon stick, broken in half
  • 1 cup sugar
  • 2 Gala apples, peeled, cored and diced
  • 2 teaspoons corn starch
Directions

In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.

Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.

Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

This will be my signature dish going forward. It has a great consistency and flavor. I split the recipe and did a Pomegranate Cinnamon and the Apple Cinnamon. The apple one i followed the recipe exactly and it turned out perfect. For the Pomegranate ( this is half the recipe yield) 1 cup pomegranate arils instead of apple 1/4 cup POM juice ( pomegranate juice) 1/4 cup cranberry juice 8 ozs fresh cranberries all other ingredients were exactly as stated...I will find out in a few days which is the better of the two but my votes is with the original apple cinnamon. I have never liked cranberry sauce, so I went online to find something a bit different that we may actually eat. This recipe is AWESOME!! This was the hit of Thanksgiving, hands down. This was GREAT!!! I added one extra apple than it called for and had to double the corn starch to get it thick enough but the flavor was out of this world. Everyone loved it. The apples are great with this. I also squeezed the juice of one orange in it. I have some leftovers so I made some biscuits the next day for breakfast and used the cranberry sauce on them as jelly. This is THE BEST cranberry sauce recipe ever!!!! The only change that I would make to this recipe is adjusting the amount of sugar that you add to the sauce. The cranberry sauce that I made the first time was too sweet because I used juice cocktail instead of 100% cranberry juice. The juice cocktail is already super sweet. This is so yummy! It's not too cranberry-ey which makes it more palatable for cranberry sauce haters. I had to add 2 Tablespoons of cornstarch to get it to gel instead of the recommended 2 teaspoons. Love this Recipe! I have done these cranberries for the last two Thanksgivings. I use fresh unsweetened cranberries instead. I also use the cranberry juice cocktail, and not plain cranberry juice. I imagine regular cranberry juice would make it a little too bitter. If you decide to use fresh cranberries, you don't need to alter the directions at all. Definitely tasty, and always a hit! JAN 21, 2011: Update...made this recipe again tonight. My husband bought Apple Cranberry so I went with it and cut the sugar in half. For those who are wondering, the 100% cranberry juice (not juice cocktail makes this recipe!!! Apple cranberry was too sweet even with half the sugar. The 100% cranberry gives it just the right amount of tart. STILL GETS FIVE STARS. So easy and delicious when made as written. DEC 26, 2010: Delicious with our Christmas ham. Found 100% cranberry juice in the organic section of our supermarket. Made recipe exactly as written except I added a touch of orange juice since our ham had an orange glaze. The flavor was tart yet sweet. The apples add such a nice texture. The leftovers were used on my toast the next morning. ONE NOTE: It did not thicken until it chilled completely, which took longer than 30 minutes. Next time, I will make it the night before a big dinner. But definitely a keeper! One thing about my family is that we don't normally go for cranberry sauce... However, my 3 year old daughter saw this on the Food Network, and declared we were making this for Thanksgiving Dinner with my mom and family. My step-dad, who normally does all the cooking, and never lets anyone else near the kitchen, let alone bring food, allowed it because it was her asking. I made this for this past Thanksgiving dinner serving 9 guests. It was such a hit I was informed I MUST make the cranberry sauce from now on. It was super easy and extremely tasty. Cranberry juice is ridiculously hard to find but I did use a "cranberry-blueberry" juice (good luck finding anything without apple juice in it) and it was a great choice. I also found I needed to use a bit more cornstarch than is called for, but I wanted it more like compote so it was perfect for that. Help!! SOS!! Ok, where did I go wrong. I LOVE to cook - LOVE to experiment w/ new recipes, etc... I could not get my sauce to 'jell' up. It was runny. I took 8 oz of liquid out (of the sauce pan) and added the cornstarch - whisked it- and then poured it back in the sauce pan. I put it in the frig to set and it never did. :-( We still ate it - It has a great taste. Any suggestions on what I might have done wrong. Okay, the recipe calls for Cranberry Juice, which is not available. Is Cranberry Juice Cocktail what is really called for? They aren't the same thing. Cranberry Juice Cocktail, is made from boiling cranberries, adding plenty of water, and lots of sugar. Ocean Spray has 100% Juice Cranberry, but the main ingredient in that is grape juice, and it also has apple juice in it. I think the recipe ingredient list needs to be corrected. Commercially-produced dried cranberries also contain added sugar, they aren't just dried cranberries. And this recipe calls for another cup of sugar. It seems to me that this will produce a very sweet cranberry sauce. So I tried it with 1/4 cup of sugar. I liked it, but my wife thought it was too sweet.
