    I have been requested two weekends in a row now to make this amazing salad... I don't even like cilantro and the flavors that burst from this salad is just - WOW!!! This is a keeper and will be made A LOT over the summer I think!! Great job Aaron - so far I'm 5 for 5 with your delicious dishes!!!

    This corn salad is so good. I have made this many many times and everyone loves it. I change it up sometimes by adding a can of black beans. Outstanding:

    DELICIOUS!! I read all the reviews, as I always do to see what worked for others & what they didn't care for. The only modicfications I made based on those was to decrease the olive oil a bit, & add diced avacado. (be sure to leave the pit in the salad to keep your avacado from turning brown. And I believe it is a MUST to make this the day before. I made it the day before my party & it was "good" that first day when I tasted it but it was AMAZING the next day after all the flavors hung out for 24 hours. Next time I might add a finely diced serrano pepper, b/c the spicier the better for me.
    This is great as a salad, but I think you could top a brat with it, use it as a topping for nachos, or even stuff it in a meat/bean burrito.

    WOW! This is simply delicious! I didn't use red onion, instead I used shallots. The dressing is simple, yet flavorful. I added about 1 tsp. of adobo sauce from the chipotle peppers to the dressing, just to kick the spice up a little.

    This was fantastic. Even the pickiest of eaters were devouring it at the 30th birthday party I attended. I doubled the recipe (except the red onion and garlic--my palate is sensitive to both, and it worked like a charm. Would serve great as a salsa with some corn tortillas!

    Crazy delicious, what a surprise! This salad is so flavorful and everyone raved about it and asked for the recipe! Great dish to bring to a party as it is a refreshing change from the tired ol' Pasta salad. I didn't have a grill handy so I broiled the ears in the oven which was time consuming. I made a double batch and it worked out well. Don't skip grilling the corn, it's a major element of this dish. Enjoy!
