You can create up to five timers

Ingredients

  • 6 egg yolks
  • 1/4 cup, plus 2 tablespoons sugar
  • 1 orange, zested
  • 2 tablespoons cherry flavored brandy
  • Amaretti cookies, crushed, for garnish
  • Chocolate shavings, for garnish
  • Cherries, for garnish

Directions

Bring a pot of water to a simmer over medium heat. Combine the egg yolks, sugar and orange zest in a large stainless steel or glass bowl. Set the bowl on top of the pot of water without letting the bowl touch the water. With a whisk or an electric hand mixer, begin whipping the yolks until foamy. Gradually pour in the cherry brandy and keep whipping until the custard has doubled in size and has thickened. Pour the custard into 4 dessert bowls or martini glasses. Refrigerate for 20 to 30 minutes to set up. To serve, top with the crushed amaretti cookies, shaved chocolate, and cherries.

    I found that this receipe did not exactly work for me the way it was presented on tv. I had to do some improvising. The custard became a little stiff and not so fluffy. I was wondering why milk was not a part of this receipe as I have seen and made with others. I did add milk to give it the consistency I thought it should have before refrigerating. I also used a little bit more brandy and replaced the cookies that were recommended with sugar cookies. My fiance does not like dark chocolate, so I replaced that with white chocolate. Overall it came out pretty good and I would make the receipe again.

    Maybe I missed something, but it didn't increase in volume at all, just 6 yolks, zest and sugar that turned into a small glob that didn't do anything.
