These are yummy. The whole family liked these. Personally I would add about half the seeds because I didn't put them in and I think a little more bite would have been good. To thicken up the onion jam I used a quarter cup water and tablespoon of cornstarch mix and it made it great. I would put at least an onion and a half or use a large red onion, there wasnt enough for the shrimp mixture. Dont be afraid to use the jam, its really good. YUM

Excellent !!!!! The only thing I did different was I sauted my shrimp with the jalapeno and some fresh garlic. The sweet onion jam is to best and I used it on my turkey burgers the next nite !!!!

I just made the shrimp salad sandwiches, and my family loved them. I made them with clam chowder. I tried regular rolls and a few hawaiian rolls. I think the hawaiian rolls beat the taste test. The hot pepper really add a nice pop of flavor.

These are AMAZING!! The sweet onion jam really puts them over the top so don't skimp on that. I served mine on kings hawaiian rolls...absolutley delicious! i will make these again and again!

Since I chose to make these at the last minute, I didn't have everything, but this is such a great recipe that it can stand up to being used as a springboard! No jalapeno seeds for us, but a freshly picked jalapeno with great flavor and the perfect amount of heat made this taste great. Having a jar of commercial Balsamic Onion Jam in the cupboard took away half the prep and it tasted fantastic! I was doing grilled shrimp for another recipe, so I grilled these and the roasty flavor added another great flavor. Served on a Graze-for-Lunch fingerfood buffet with baguette slices, done open-face as needed. Delish!

These sandwiches made for a fantastic quick dinner. The shrimp had such a great flavor, with just the right amount of heat. I didn't have time to prepare the shrimp according to the recipe, but instead used some very small pre-cooked shrimp...it still came out tasting amazing! My family usually don't like onions, but they gobbled down that onion jelly without question! It was absolutely delicious and really topped off the sandwich.
When I'm looking for something to cook with great flavor, I always go to Big Daddy's recipes first. I record his shows because we're at church on Sunday mornings - PLEASE MOVE BIG DADDY TO PRIMETIME - He has earned it!

This takes basic shrimp salad to a whole new level! Using the seeds as suggested makes a SUPER HOT salad, I made 2 batches, one with seeds and one without. Even without the seeds you have some nice heat. I doubled the mayo, 1/2 cup just wasn't enough. DON'T BE AFRAID OF THE ONION JELLY, it was fantastic on these sammies, which I served using hawaiian rolls.

Tried this receipe today 7/4/10 and it was a big hit. It was terrific and so spicy and tasty as are all of Big Daddy's receipes. He is the best. Wish he would get a prime time spot on Food Network or at least show his show more than just Sunday at l:30 PM. I LOVE his son Justin and the relationship between dad and son. More shows with both of them please. Delightful viewing and wonderful receipes!!!!!!!!

Last night I hosted a fundraiser for the 3-day walk for breast cancer and the comment of the night was 'Who made these they are delicious'...This was my first time making these so I was taking a chance and I'm so glad I did. I had to altered the recipe a little. I'm not a big fan of spicy food and I also had to consider my guest. I used half the amount of the jalapeno peppers and none of the cayenne pepper. I also used celery seed instead of the stalk of celery and omitted the shallot because the market didn't have any. The sweet onion jam was the best even though the onions didn't cook down like I wanted them to but still soft enough to enjoy. I will for sure make this over and over and over again. Thank You for being so creative and giving us a chance to share it with friends and family. When I send my thank you notes to my guest, I will attach the recipe along with it. Thanks again. Oh, and by the way, I raised my goal.
