    I really liked this recipe! One big hint I'd like to offer to make your life easier: Put a piece of parchment down first, then the bread crumbs and then start building your phyllo layers. Having the parchment underneath the roll makes transporting it to the cooking sheet a snap. Also if you start having issues with your phyllo wanting to tear, the parchment can be used to assist in rolling it all up...like using a sushi mat to roll sushi. Changes: I sauteed 1/2 cup of diced red bell pepper and about a 1/4 cup of diced red onion in the butter before adding the eggs. I used both Queso Fresco and Monterey Jack cheeses and mixed about half the cheese into the eggs before I pulled them off the heat. The eggs came out perfectly cooked, the roll sliced easily and each slice held its shape on the plate - and the Ranchero sauce and Zesty Guacamole took it right over the top. As gorgeous plated as it is delicious. Will definitely make again. Thanks!

    I made this last weekend. We loved it. I did change up a few things simply because of what I had on hand. Instead of canned black beans, I used some leftover refried beans that I made a few days earlier. They were made with some tomatoes, so it made the dish have some moisture to it. I also did not have the same cheese he used, so I used Kraft shredded 4 mexican cheese.
    The trick to getting it to roll easy is to make sure you use plenty of butter on the phyllo dough, but not to put it on the first layer. The bread crumbs worked wonders on not letting the dough stick to the counter.
    The Ranchero Sauce was AWESOME! I used a a TB more of the chipolte sauce than he did for added heat. We were so impressed with it, we are making the sauce again tomorrow for Cinco De Mayo.
    I will definitely be making this recipe again! Yumm!

    I made this recipe today for my husband and he really loved it. Instead of canned chilies, I used Hatch, NM green chilies and the flavor was so wonderful. I also put the chilies in the eggs which my husband loved. Will definitely make this again.

    This is a great recipe! I added more chipotle peppers than called for in the recipe for added heat and I have to say it was awesome! Rolling the eggs in the phyllo dough was really, really hard, though, and I almost gave up! I ended up having to add peices of the dough all around to hold the eggs and cheese so it didn't look nearly as good as it did on the show, but it was worth the frustration! I used monterey jack cheese and it melted quite nicely. If you are willing to work with the phyllo dough, definitely give this recipe a try!!

    I was watching "Big Daddy's House" yesterday and this recipe just inspired me to cook. Mostof my friends are vegetarian so I'm always looking for recipes that i dont have to subsitute many ingredients and this was one of them. Prep time really wasnt that bad...i even made the guac and the sauce. The one thing i did like is if you really cook you have almost all of the ingredients on hand. Anyway Janet in answer to your question, i followed the directions to the t and suprisingly the eggs were not dry at all! Now your right about the cheese, not only did it not melt, but i couldnt taste it (although it did have a nice creaminess to it. Rolling it in the phyllo dough was the most challenging thing for me. I also made the hash but omitted the cheese and added red bell pepper with the jalapeno as well as some morningstar sausage crumbles. Also instead of the chives i added parsley. That turned out pretty tasty. I also made some orange flavored cinnamon rolls to round out my meal with a little something sweet. All and all My veggie friends loved it saying that the salsa with the guac made the Huevos Rancheros. To me it was just okay, but i will have another go to brunch recipes for vegetarians.

    Huevos rancheros is my most favorite breakfast ever! When I saw this recipe on the TV I was really excited. I do have to make some changes simply because I am allergic to eggs but that doesn't stop me from having a great breakfast. When I saw this I was excited but the eggs, beans, and cheese inside the philo dough looked a little dry to me. The queso fresco doesn't melt, there is no liqiud from the beans or the eggs and there isn't even any tomatoes inside the dough. Where normally there is just sauce pouring all over this dish in pretty much any restaurant you go to. I think I would definitely change the inside a little bit to have some moisture inside, at least some drained chopped tomatoes. Then go ahead and add the sauces to the outside of the dish. Or maybe even put some of the guacamole inside the philo dough.
