I made full sized burgers and replaced mont jack cheese with a pepper jack or haberno cheese...and replaced creme fraiche with sour cream.
I also have added a little bit of the salsa verde directly in meat if I don't have heavy cream.
But all in all, switched up or original recipe - these are AWESOME!

Great stuff, we won our local "Iron Chef Colorado" amongst friends with these as my entry (Peppers were the secret ingredient... def. use bakers racks over cookie sheets and it's so much faster than trying to grill them...
BUT...
The creme freche/salsa verde is a pale 2nd to Bobby Flay's Chipotle Mayo recipe.. make that, combine the two and people will be fighting over these... I'm making them again tomorrow for the holiday :
Easily the best thing I've made from this site in two years... cheers!

I made these for a Memorial Day BBQ and everyone loved them. Made them so they would perfectly fit inside the "bun" and offered different condiments. My family likes it hot so will either add more jalapenos or add some seeds. Great for entertaining as I made these into patties early in the day to give the flavors a chance to enhance.

I've made these several times for my family. We have three children (ages from 3 to 11. I didn't include the jalapenos because the kids don't like really spicy food...and I replaced the shallots with chopped sweet onions and garlic. I also added a little extra pepper jack cheese. They are fabulous...my three children were fighting over the last one. The next time I made them, I doubled the recipe and made full size burgers on the grill. I do agree with another reviewer that the cooking time is not correct...it's definitely more like 30-35 minutes when baked in the oven. Thanks for this one...love all of your recipes.

This was my first try at one of Aarons recipes. I was expecting so much, yet I was disappointed. I expected more flavor. Next time I would probably change it up. Also, the ratio of creme fraiche to salsa verde did nothing for me. I am a Le Cordon Bleu trained chef and maybe that's why I expect more flavor, I don't know. Sorry Aaron, I am going to try many of your recipes though because I love your personality, respect your skill, and believe you know BIG flavor profiles.

These were sooooo yummy! I made them for a big group of people and everyone loved them! I followed someones suggestion to use Bobby Flays chipotle sauce and that totally made them.

These were some of the best burgers I ever put in my mouth. They were a huge hit with our family & are now a requested item for family dinners. The only problem that kept this from getting 5 stars was that we had a lot of trouble with the cooking time. 12-15 minutes at 350 turned into closer to 30-45 minutes and some of the burgers were still a little pink on the inside, but all in all this is a recipe we will continue to use for years.
