Spiral Ham

4 to 6 servings

  • 1/2 cup dark brown sugar
  • 1/2 cup honey
  • 1/2 cup fresh orange juice
  • 1/2 cup peach nectar
  • 4 to 5 chipotles, minced
  • 5 pound spiral cut smoked ham

Preheat the oven to 375 degrees F.

In a small bowl, mix together the brown sugar and honey. Set aside.

In another small bowl, mix together the orange juice, peach nectar and chipotles.

Arrange the ham, cut end down, in a large baking dish. Pour a few tablespoons of the juice mixture over the ham and in between the layers. Bake for 30 minutes, basting every 10 minutes with the remaining juice mixture.

Remove the ham from the oven. Reserve about 1 1/2 cups of cooked juice from baking dish. Brush the honey mixture on the ham and return to the oven to bake for an additional hour until a crust forms and the ham begins to caramelize. Remove from the oven to a serving platter and serve with the reserved baking juice.

    This is my husband's favorite ham recipe. I love that it's a traditional ham, but with a kick to make it not just the plain old dish. I've tried it a few different ways. I usually use dried chipotle powder since the fresh are hard to find and I've tried it with apricot nectar too. Any way we make it, it's always a huge hit.
    I guess I should clarify... I use the dried chipotle powder that comes in cube form since the whole chipotle's have been hard to find in my area. I break the cubes up with the flat of a knife because I don't trust that they'll dissolve in the liquid. This has worked well for us.
    I used orange-mango-agave nectar instead of peach. Whats with the peach anyways? anywho since my last hysterectomy all I want to do is eat ham! any other ladies have this? Its a great dish and my three little ones have just a barrel of fun with the spiral cut peices- if we could just keep our little dog Mr. Wiggles out of the ham we could have some for leftovers! Lol!
    So chipotles are dried smoked jalapenos. Do they need reconstituted before cutting up? Or has anyone used the chipoltles in adobe sauce and rinsed off the sauce?
    I also used orange-mango juice and mango nectar instead of peach. This was THE BEST! Not too sweet, not too spicy. The ingredients balanced each other out perfectly. We had this for Chirstmas AND New Years...Next I'm putting this glaze on some wings for the superbowl!!!!
    Made this for thanksgiving and it turned out great! (It outshined everything else on the table it was that good. I will be sure to make this again next year.

    I made this ham for Christmas 2010 and I will do it this year for 2011. I rinsed my chipotles well and removed the seeds and minced them. The pepper goes well with the sweetness. I will use mango-orange juice instead of peach nectar. Day-after ham is the best, saving the hambone and drippings for greens on New Year's Eve. Thanks Big Daddy.
    Did you use chipotles in adobo sauce and rinse them off?
    Best ever. I've always used brown sugar and pineapple juice on just a regular ham. Since watching Aaron I love the brown sugar, honey mix with the spiral ham. The only thing I do different is I use an upstate apple cider from an apple farm named Beak & Skiff. WONDERFUL!!!!!!
    This recipe is AWESOME! I love Aaron, this ham is delicious and don't worry about all the chipotles the honey mix evens it out. Delicious!!!
    This was one of the best hams I have ever tasted. The chipotle peppers mixed with the peach and brown sugar flavors really gave it something special. I saved the juices/toasted sugar from the bottom of the pan to pour over the top of the ham. It was fantastic! Thank you Aaron!

    Fantastic! instead of peach nectar and OJ, we used Naked brand Mighty Mango juice and even my picky eaters liked it!

    Let me begin by saying I do not like ham. However, my husband loves ham and that is what he wanted for New Years dinner. I was dreading it until I saw this recipe. Love, love, loved it and so did my husband. Had to make a slight variation as none of my local grocery stores carry Chipotle so used a fresh Jalapeno (without the seeds) instead. Next time (and yes there will definitely be a next time, I think I might try leaving off the brown sugar and honey glaze as I thought the peach, orange, pepper distributed throughout was fine).

    fyi for Dourri - look in the juice section of your supermarket for Kerns Peach nectar and as you can see I used fresh peppers rather than Chipotle.
    I made this for New Years Eve. I had a larger ham, so increased the ingredients of the basting liquid. I was careful to get the basting liquid distributed throughout the slices and the end result was VERY spicy, but good. Next time, I'll not increase the chipotle amount if I need to increase the amount of basting liquid, and I also will let it keep to the outside and not worry about getting it in between the slices.
    Fixed a spiral ham using this recipe and it was the best. My daughter won't eat a spiral ham unless is brought from this particular company. She tried it and said it was the best and that she liked it better than the other company. So in my household, this recipe will be used for every holiday I do a ham. Great recipe!
    We tried this before christmas on the day we watched the show. I ran out and found a spiral ham but like some others could only find 7-8 lb hams. The first one was real good so we decided to have it along with turkey on christmas. The only thing we did different on christmas was we used an emulsion blender on the liquids. It really brought out more of the flavor of the chipotle peppers. The ham was a REAL BIG HIT! This will now be our one and only recipe for ham. Thanks for showing this one!
    Aaron, you are a god with these recipes! I was not able to get the spiral cut ham but I made this with a half ham. I covered it with aluminum foil while basting and put the glaze on the end at 375. Everyone raved over the outcome. I served it for Christmas Brunch with your Holiday Cobb salad (using the ham with the chipotle glaze instead of the maple ham, an Italian frittata and potato salad. I can't wait to do this again!

    I need help!!!..I watch the show regularly even though I seldom cook. When I saw the spiral ham recipe, I thought there's a recipe that even "I" couldn't screw up...(but I guess I did). I started with a spiral cut ham from Costco... I couldn't find pure peach nectar so I bought several cans of peaches & used the juice along with the listed OJ....I used chipolte chiles but they were in an adoble sauce which I rinsed off. I basted every 10 min as required & then did the glaze....my mouth watering in anticipation...when served, it was the DRIEST, most BLAND ham I've ever had...I can maybe understand the lack of taste since I didn't use the listed nectar & maybe the adoble chilis were wrong but how in the world could the ham have been SO dry???..I want to try one more time because of the rave reviews & I love ham.....Should the chilis be fresh or canned?...I don't remember from the show....How can I screw something SO simple sounding up?... I guess I'm just a FailedChef...
    I was a bit nervous with the chipotle peppers as my son really doesn't do spicy, but wow! This glaze is amazing! I made extra of the juice mixture, reduced it down and served it with the ham. Sweet, spicy with just a bit of tang from the juice. Will definitely do this one again.

    I did this last year for the first time for Christmas. I'm doing it again...delicious. I'm not too much of a cook...this was simple. The whole family loved it!!!!!!
