Ingredients
  • 1/2 cup dark brown sugar
  • 1/2 cup honey
  • 1/2 cup fresh orange juice
  • 1/2 cup peach nectar
  • 4 to 5 chipotles, minced
  • 5 pound spiral cut smoked ham
Directions

Preheat the oven to 375 degrees F.

In a small bowl, mix together the brown sugar and honey. Set aside.

In another small bowl, mix together the orange juice, peach nectar and chipotles.

Arrange the ham, cut end down, in a large baking dish. Pour a few tablespoons of the juice mixture over the ham and in between the layers. Bake for 30 minutes, basting every 10 minutes with the remaining juice mixture.

Remove the ham from the oven. Reserve about 1 1/2 cups of cooked juice from baking dish. Brush the honey mixture on the ham and return to the oven to bake for an additional hour until a crust forms and the ham begins to caramelize. Remove from the oven to a serving platter and serve with the reserved baking juice.

I made this ham for Christmas 2010 and I will do it this year for 2011. I rinsed my chipotles well and removed the seeds and minced them. The pepper goes well with the sweetness. I will use mango-orange juice instead of peach nectar. Day-after ham is the best, saving the hambone and drippings for greens on New Year's Eve. Best ever. I've always used brown sugar and pineapple juice on just a regular ham. Since watching Aaron I love the brown sugar, honey mix with the spiral ham. This was one of the best hams I have ever tasted. The chipotle peppers mixed with the peach and brown sugar flavors really gave it something special. Let me begin by saying I do not like ham. However, my husband loves ham and that is what he wanted for New Years dinner. I was dreading it until I saw this recipe. Love, love, loved it and so did my husband. Had to make a slight variation as none of my local grocery stores carry Chipotle so used a fresh Jalapeno (without the seeds) instead. Next time (and yes there will definitely be a next time, I think I might try leaving off the brown sugar and honey glaze as I thought the peach, orange, pepper distributed throughout was fine). fyi for Dourri - look in the juice section of your supermarket for Kerns Peach nectar and as you can see I used fresh peppers rather than Chipotle. item not reviewed by moderator and published
I made this for New Years Eve. I had a larger ham, so increased the ingredients of the basting liquid. I was careful to get the basting liquid distributed throughout the slices and the end result was VERY spicy, but good. Next time, I'll not increase the chipotle amount if I need to increase the amount of basting liquid, and I also will let it keep to the outside and not worry about getting it in between the slices. item not reviewed by moderator and published
Fixed a spiral ham using this recipe and it was the best. My daughter won't eat a spiral ham unless is brought from this particular company. She tried it and said it was the best and that she liked it better than the other company. So in my household, this recipe will be used for every holiday I do a ham. We tried this before christmas on the day we watched the show. I ran out and found a spiral ham but like some others could only find 7-8 lb hams. The first one was real good so we decided to have it along with turkey on christmas. The only thing we did different on christmas was we used an emulsion blender on the liquids. It really brought out more of the flavor of the chipotle peppers. The ham was a REAL BIG HIT! This will now be our one and only recipe for ham. Aaron, you are a god with these recipes! I was not able to get the spiral cut ham but I made this with a half ham. I covered it with aluminum foil while basting and put the glaze on the end at 375. Everyone raved over the outcome. I served it for Christmas Brunch with your Holiday Cobb salad (using the ham with the chipotle glaze instead of the maple ham, an Italian frittata and potato salad. I need help!!!..I watch the show regularly even though I seldom cook. When I saw the spiral ham recipe, I thought there's a recipe that even "I" couldn't screw up...(but I guess I did). I started with a spiral cut ham from Costco... I couldn't find pure peach nectar so I bought several cans of peaches &amp; used the juice along with the listed OJ....I used chipolte chiles but they were in an adoble sauce which I rinsed off. I basted every 10 min as required &amp; then did the glaze....my mouth watering in anticipation...when served, it was the DRIEST, most BLAND ham I've ever had...I can maybe understand the lack of taste since I didn't use the listed nectar &amp; maybe the adoble chilis were wrong but how in the world could the ham have been SO dry???..I want to try one more time because of the rave reviews &amp; I love ham.....Should the chilis be fresh or canned?...I don't remember from the show....How can I screw something SO simple sounding up?... I was a bit nervous with the chipotle peppers as my son really doesn't do spicy, but wow! This glaze is amazing! I made extra of the juice mixture, reduced it down and served it with the ham. I've never been a big fan of ham, they are usually just salty and bland. Wow did this recipe change my mind! My entire family is now addicted to this recipe. It's very easy and incredibly delicious. I did cut down on the chipotle by a good 50% since we're also feeding a toddler. It still gave it a nice spicy undertone, but not enough to make anyone find it too spicy to eat. I made this whole dinner for Christmas and it worked great!!! Everything dish went well with each other. We love spicy food in our house. I'm not sure my nephew liked it as well as my husband and I. I think next time I'll take out the chipolte seeds/ribs next time to tone down the heat for company :) The leftover ham was excellent with zucchini and squash that I baked in the oven until the veggies were done and it made another great meal for us. I used your recipe for my Christmas ham and my family loved it. My husband said it was the best ham he ever had. I am making it a second time when I found a non-spiral ham sale at the grocery store. I made this ham and thoroughly enjoyed the flavors of the peach mixture glaze. I glazed the ham longer than the recipe requested with no ill effects. When the ham was finished, I did a final basting of the ham with the juices in the pan. The combination of the peach glaze and the brown sugar mixture made the ham taste even better. I especially liked the kick that the smoked chipotles added to the flavor of the ham. They weren't over-powering but you definitely got a great heat / sweet taste. This was by far the best spiral ham we have ever had!! I loved that when you took a bite of this ham it tasted sweet but then it had a kick as it touched all of your palette! My daughters (19 &amp; 15) actually prepared this together, (and with not much fighting I might add) for our family. My parents also loved the great flavor of the ham. Leftovers were also wonderful!! The recipe is brilliant because the chipotle goes so perfect with the meat! The fact that it allows for layering of the pepper sauce and the orange instead of the usual pineapple, made this ham a delight never to be forgotten and will be associated with Christmas forever! Made this ham for Christmas Eve dinner for 4 diners and my oh my was it good! I worried about having leftover ham in the fridge for days and days, but it didn't happen. I have never made a ham and I made this one today after seeing last week's episode. Although, I've never tasted Aaron's food, he seems like a great cook. I've tried several of his other recipe's, but have never left a response. This recipe was easy and taste great. I purchased an 8lb ham and followed the same recipe and it still came out great. This is one of the best ham recipes that I have had. It was super simple and nearly idiot proof. It was very moist and not spicy at all. The only problem I had with the recipe was that I didn't get nearly as much juice as Aaron did. I also cooked mine longer since I had a 10lb instead of the 5lb that he used. Finally some recipes without all the bells &amp; whistles. I cook to feed people great food &amp; find most recipes from foodnetwork are over the top with useless additions that add little to the flavor of the meals until now. This is my new "go to" ham recipe. I decided to try this out after seeing the "holiday happiness" show on Sun. I couldn't find a 5lb ham, so I had to get a 7lb...I only cooked it about 20mins longer than the recipe called for. I did have my digital thermometer in the ham so I could monitor the temp...you definatly don't want to over cook a ham (which can be easy w/ a spiral cut). I could only find dried chipotles and chipotles in adobo sauce...I bought both, but when I got home I decided to drain and rinse the ones in adobo sauce. All of the flavors compliment each other so well, that nothing overpowers any of the other ingredients. I guess I should clarify... I use the dried chipotle powder that comes in cube form since the whole chipotle's have been hard to find in my area. I break the cubes up with the flat of a knife because I don't trust that they'll dissolve in the liquid. This has worked well for us. item not reviewed by moderator and published
