Last Friday I watched Big Daddy throw this bad boy loaf together, and I thought, I love meatloaf, I can do this. I looked out the window: snow, sleety crap coming from the sky. Man, I need some comfort! I'm going to do this. I slogged off to the store and got the fixin's. An hour later, I'm back, I'm in the kitchen, choppin', measurin', stirrin' to zydeco music cranked up. I'm feelin' good! And later, when I pulled it from the oven ... Whoa dude, the meatloaf gods were grinnin'! Man, I'm not a cook, and yet, I did this. My wife (of 35 years was amazed. The stuffing in the middle blew her away. "I love feta! How'd you get that in there?" Two slabs and a big ol' mound of mashed potatoes later, I am feelin' fine. Thank you, Big Daddy!

P.S. Guys, amaze your lady. Big Daddy's got a recipe to do it. Check it out. It will pay you dividends.

Wow! This recipe was a huge hit with my family. I had fresh spinach on hand...just chopped it in the food processor. It won't be long before I make this again!!!

Used chicken instead of turkey. Turned out great. So plan on cooking this again. Only thing I plan on changing next time is using a little less chicken broth and milk as the meat mixture was a bit loose and didn't hold shape well. But the flavor was good and the stuffing was great. The grits gave the breast meat great moisture, plan on using that trick in other recipes.. ;

This recipe is over the top delicious. I wasn't a fan of meet loaf until I prepared this one.
