    This is an excellent recipe. The fresh flavors brought together are delicious. I have prepared this recipe many times. The second time I used Edamame beans with an 8 ounce frozen bag. It was so wonderful that I decided to serve it as a cold dish standing alone. No bread, no ricotta. This is a wonderful everyday salad AND great for company. It made it into my "keeper" box.

    I needed an easy fresh pea salad so, I didn't do the bread and ricotta. I cut the amount of garlic and herbs a bit on the theory that the large amount was there to offset the bread and cheese The resulting salad was very good. I'd make it again.

    this was so easy and so good. had a huge dinner party and everyone was so impressed. very refreshing with the other warm and heavier apps i served. the recipe calls for fresh peas but i used frozen and it worked. alos i couldn't find any good focacia so i just used an italian loaf and that was good too. had to email the recipe to two people today already!

    o.k. no joke. i have been married to a 6th generation texan for 18years.
    The man would not look at peas much less eat them,,,B.B.Q. coming out of his ears,,And Dont get me started on pinto beans. BEans.

    This was such an easy recipe and so full of flavor. Will definitely make again and again. I used a french baguette instead of focaccia. Everyone loved it and we finished it off between four of us.

    After watching your show on 07/19/2009, I immediately went to the grocery store to get the ingredients. I never liked peas, but after preparing your recipe; I will eat peas more. The additional ingredients changed my experience from the usual boring peas to an appetizing and inviting tasting peas and quite simple and easy to make. I will definitely prepare it again next weekend for my guests. This is a cocktail snack keeper! Thank you, Mr. McCargo Jr.
