This was very light, perfect for a summer evening dinner party. I used regular saki because I couldn't find ginger saki. I also opted to buy a 46 oz can of pinapple juice and reduced it down in 2 batches. I think the effect must be close to the same but not so labor intensive. The pickled strawberries were yummy! I also couldn't find strawberry juice, so I used Dole Strawberry Kiwi juice. I will definitely make this again!
