    We had lots of cucumber to use up from our garden, so I thought I would try this recipe. It was a really fun and interesting twist on the traditional BLT. My husband and I enjoy trying new (especially ethnic flavors, so it was definitely a crowd-pleaser.. And my husband isn't even a huge cucumber person.

    Next time, however, I would make a few adjustments. I think I would use 1 cup of mayo, but the same amount of spices to make the flavors stand out a bit more. I would also use more mint than I did (but perhaps my handful is different than someone else's. But, again, we really enjoy ethnic flavors in this house!

    This recipe actually made 5 sandwiches for me with some leftover cucumber and mayo (if we had had more bacon, we could have made more sandwiches!. But I'm sure the mayo will get used on some other sandwiches. : Overall, this is a great idea and a fun and easy recipe!

    Wow! This BLC is amazing. I have made it several times and everyone has loved it. The other thing I loved was it was so easy and I had everything in my cupboard already.

    i love BLT's and the spices in the mayo take this sandwich to an entire different level! I loved the mint especially. I used half the ingredients for the mayo for 4 sandwiches.

    I'm not much of a fan of mayo - I only use it on a blt or in tuna salad. So I thought I would try this recipe. Fantastic! Easy to make, and it was a refreshing change of flavor! Love Aartis recipes, can't wait to try another! I only made a sandwich for myself, and I'm thinking of making just a batch of the mayo so I can keep it around for a few days - wonder how long it would keep for?

    Easy, interesting flavors -- a great summer sandwich! Followed recipe as written. Can't wait to try more of Aarti's recipes. My kids loved this one!

    Couldn't wait to try this and finally made it today. I must say it was very good. I think I would go a little lighter on the mint the next time, just personal preference. Can't wait to try some of the other recipes I saw too.

    I, too, had to try this after hearing the judges on the show. I have been interested in many of Aarti's recipes, but this is the first one that I had everything on hand for already.

    It is is very flavorful and great. The spicy mayo is yummy.
    A couple comments...

    I went light on the mint because I wanted my husband too try it. Next time, I would use all the mint (he didn't like it anyway.
    I doubled the garlic because, well, the world needs more garlic!

    Luckily, the mayo is great and could be used on many different sandwiches, because 1 1/2 cups for 4 sandwichs, YIKES! Does anyone really use that much? If you only want enough for these sandwhiches, make A LOT less.

    Great recipe. I will be using the mayo on a CLT next (cucumber, lettuce, and tomato. With the great flavors, and a little salt on the veggies, you don't even need the bacon.

    When I saw this episode of The Next Food Network Star and how the judges raved, I immediately wanted to try out this recipe. It was really simple to prepare, and with the mint in the mayo and the cucumbers, it was surprisingly refreshing. I may go a little easier on the garlic next time, but other than that, it was delicious and this will become a staple sandwich in my house.

    It is unreal how easy and flavorful her recipes turn out. The mint is a very nice cool balance to all the spices. This is the second recipe of Aarti's I have tried. You must try her Tandoori one!
